1. Anything, depending on your preference. Dualspec now exists which costs 1000G, should you wish to have two specs at your disposal to swap between.
2. Not that matters at level 69. Flying might be dirt cheap now, and available at level 60, depending when you quit.
3. Northrend.

1) Whatever you feel like playing, see stickies.
2) Not really... Some talents were changed, more specifically, make sure you re-read the tooltips on Serendipity in the Holy tree and Rapture in the Disc tree, those two talents changed big time some time this year, other than that, I don't know, can't remember what patch was live 1 year ago, but Holy is still the big nuke healer, Disc is still the damage preventing, solo-targeting healer and Shadow still melts faces.
3) Just chain quest in Northrend and you'll be 80 before you're done with half the new zones, all my toons hit 80 while questing in Sholazar Basin, after completely clearing Howling Fjord, Borean Tundra, Dragonblight and Grizzly Hills, which will leave you Zul'Drak, Crystalsong Forest, Storm Peaks and Icecrown to farm quests in for gold, when you need / feel like questing for gold... Or chain queue instances, whatever suits your needs.
