When you're playing your first toon, it's hard. It's hard to make money, it's hard to find good gear, and it's hard to find appropriately challenging content that won't slow your leveling to a crawl.
It's hard, but it's not impossible. This is a game that takes time. This isn't a Blockbuster rental, that you have to master in 3 days or pay a late fee. Take your time, pace yourself (don't stay up until 4 in the morning .. "one more quest, just one more"), don't burn out. There is a whole lot of content to enjoy, many many (many many many) stories to participate in, so enjoy it. Read the quests, see what's going on. It's fun.
And leveling to 80 is only half the game anyway. Once you hit 80 (or 85 when Cataclysm comes out), there will be plenty more to do, so again, pace yourself, don't burn out.
That said, the link amg0001 posted is an excellent resource. True, it's over a year old, but nothing has fundamentally changed in the leveling world to make any of that obsolete. He shows what your talents (and glyphs) should be every 10 levels. It's a good guide. Make sure you check backfilled talents (like 2/5 Lightning Mastery at level 40, but by level 50 you should have 5/5).
So, yes, you could certainly use better gear. But what gear you get is usually not something you can directly control. On the other hand, your talents and rotation are. Use the guide to fix those, and do your best.
When doing instances, a staff is a good piece. But when out soloing quests, a shield quite literally doubles your armor. Makes you live longer (at least long enough to get a heal off).
Some fights I had while leveling were simply: Flame Shock, heal, heal, heal, heal, Flame Shock, heal, heal, heal. Even with a shield to hide behind, I had very little time for anything except healing myself while waiting for the flame shock to kill it. Other fights (especially when Lightning bolt critted) were over so fast, the mob never even got to me.
Elemental is a challenge, but it's also a lot of fun. Stick with it, and you'll have a fun character to play for a long time.
