Is it practical to lvl a fury warrior to lvl 60 using just a 2 hander? I hate duel wielding 1 handers, especially in classic lvling areas

It is possible however not advisable due to Arms being king of 2h leveling due to high damage talented instants you get very early (Rend and Overpower).
I assume you can build your TG fury build with a 2hander but it will be kinda boring experience. You dont get any instants till 36 (whilrwind) and 40 (bloodthirst). Ofc there is victory rush earlier. So basically till 36 you will have to level in battle stance anyway, while using overpower and rend, both unsupported by your tree.
Its is highly advisable to spec arms till lvl 60 and respec after.

it's possible to level a hunter with no pet, it just makes things harder.
this would be a similar case; go arms if you like 2h while leveling.
