Okay, I just dinged 80 on my first character, a Death Knight (I know, I know) and I need some help. I need to know, how ready am I, as far as dungeons?

This is my first 80, so I have never expirianced a heroic dungeon, and also, NONE of the WoTLK dungeons, so what do you think, as far as my gear and such, I am probably good enough for?

Use the heroic LFD tool, it will let you know lol.

Honestly, your gear is a mess. You have PVP, DPS and tank gear. First thing I would suggest is read the posts on here about spec, gear and rotation. Maybe check out the guide on elitestjerks as well. If you're going to DPS, ditch any non-DPS gear and start running the regular 5 mans until you have some improved gear and to help become familiar with them. Then move on to the easier heroics to gear up some more. Take advice from people you play with or ask some more experienced players for help.

first you're gonna have to pick between dps and tank, then you're going to go run reg toc 5-30 times and get every drop from there related to the spec you picked and then move on to the reg icc FoS PoS and eventually HoR instances. By the time you have 4-5 of the drops from there you should start running heroics, if you can get into H ToC or H FoS/H PoS go for it if you're dps, if you go tank, stick in the regs till you have every single drop you could possibly want then step up to the same and start filling weakest slots with badge gear first. After 90 hours of game time you should be geared to the point nothing drops in heroics or for anything other than frost badges, good luck, have fun, don't pull your hair out in frustration before hand.

Did you really have to post 2 topics about you just hitting 80? Youre a dps DK, just queue up for random heroics and dont fail at your class. Although youll experience some long queue times as dps so dont expect to get geared in a few days, my 2 dps 80s wait on average 10-20mins for a single grp, im lucky to get 10 or so EoTs a day on them, my tank on the other hand can farm enough EoTs for t9 tank and t9 dps in a day probably.

Your spec is not quite right. I wouldn't normally care a whole lot, but you're missing 2 key talents in SUPERAWESOMEGARGOYLE and Wandering Plague. You didn't do too bad though. Just check out that link and you should be good

IMO lose bone armor, pick up gargoyle, wandering plague, perhaps ghoul frenzy. And perhaps lose vendetta, as you shouldn't be dying very often as dps, to the point where vendetta would help.
