Should I start gemming for haste?

The soft cap is when you have enough haste that with your judgement buff up your FoL is 1 Second, that's because the global cooldown will never be any lower than that. I don't think you'll get your Holy Light down to 1 second without seriously gimping everything else in the process.
That number for us is 676 i believe. At any rate the closer you get to that the less each point of haste does. That's why nobody gems for haste, the benefits of 20 int stay just as strong (top end mana, sp, crit, replenishment effects) pretty much no matter how much of it you stack.
Conciously choose gear with Mp5 and Haste over Crit and Mp5 while you are gearing up and you will get your cast times down to very reasonable levels. Without trying my FoL is 1.1 second and my HL is 1.5 without anyone else's buffs (shammy, moonkin, or ret make it even better), and my casts are on the slow end here.
Looking at your profile I can't see where you could really do anything differently. I can't imagine you are having any issues at the moment anyway. I question 3 points in benediction though... seems that could better be spent filling out the remainder in BoW and Concentration Aura to benefit the other casters in the group with all the raid damage these days. But I doubt that would make or break any runs.

I mean, the 250 mana will probably cover me for about two FoL's, right? and I never actually get close to running out of mana usually, but then I'm not at the top end content. WoW-heroes classes
Greater Mana Restoration
as a higher level enchant, so maybe I'll just go with that since none will really benifit me much.
It takes two minutes for the Mp5 enchant to be better than 250 mana, if you do encounters longer than 2 minutes, you should get the Mp5 enchant.
