I know agil is the best for a hunter, but i was thinking of orange gems for red/yellow sockets.
There are two gems that give 10agil, but one give 10 resil and the other 10 hit.
For the blue socket i was thinking of

Im SV and HvW ups AP so i want stam gems. But resil is needed for pvp. Hit rating is always nice to have too.

Here's the rules:
Red: Always gem +20 agility
Yellow: Gem 10agility / 10crit (Deadly Ametrine) if these conditions are met:
The item doesn't have a blue socket
The item has a socket bonus of more or equal to +4 agility and +12 attack power
Blue: Ignore this slot and put a +20 agility in it. If the items has 3 sockets (red, blue, yellow for instance)
you can use Nightmare Tear in the blue socket, a deadly ametrine in the yellow, and a delicate cardinal ruby in the red one. The nightmare tear can only be used once in your gear, so always pick the one with the greatest socket bonus.

So like MemMem said agil all around. But what about stam gems? Since SV grants AP from health via HvW

Stamina and resilience do not benefit your DPS. Do not use gems that have these stats on them.
Put a Nightmare Tear in whatever blue socket will give you the best bonus. Red is always +20 agility. Yellow should be +10 agi/+10 hit or +20 hit if you're below the cap, otherwise straight agi or +10 agi/+10 crit if the socket bonus is good.
For SV, your yellow socket bonus would have to be +8 agility to make a Deadly Ametrine better. For MM, a bonus of 4-6 agility might make the agi/crit better than straight agi. I'd put the cutoff at a bonus of 6 agility for a yellow socket as a general rule of thumb.
You can always use a DPS analyzer to confirm which gem would be better, but your best bet is usually straight agility. Very few sockets have a +6 agility or better bonus.
