onyxia dagger is better then both your old daggers...
so put it in mh and use brew dagger in offhand
Gutgore Ripper is better in OH due to Shiv's lower energy cost

Well, in damage term Onyxia dagger seems better. But we have to look at its speed as well.
No you do not. Speed is a good indicator of damage range, nothing more. The ripper does so much more base DPS that even though the swing speed is .2 seconds faster, the average damage is still much higher (by 25 on the low end and 46 top end). The procs on these new weapons are very useful for burst in PVP, though a bit unreliable.
