Put it on DND, leave all chat channels, and hand over the keyboard. Accompany him if you wish. I don't see a problem with 30 minutes per day.
Not sure about the /s channel though. You might configure his chat box to filter everything rather than bothering to leave certain chat channels.
Edit: As for the best way to teach him, hand over the keyboard and answer his questions. Give him a pointer to practice every day. If he's ready for a new pointer the next day, then surely oblige him.

I did an UBRS fun-run (so, we're all 62-70), and my horde-guild's GM was on his alliance toon with us, supervising his 6-year-old daughter. She plays a druid. He sets the talent points, picks her gear (although if it's about even, he lets her pick which is prettier) , she just goes where he points and mashes buttons. We let her tank the Beast, which basically consisted of her hitting growl every cooldown.
So, obviously, no playing at all without you right there. Like, right there in the next chair, not right there in the computer across the hall or even on the other side of the table where you can't see. All channels down, DND.
I'd actually say mage. Maybe you could roll something to go with it, maybe a tank or a healer --or hey, go paladin -- whatever, something where you can defend him. He can mash fireball or ice or arcane and you can spec him for whichever he most enjoys watching zoom across the screen.
You want him to be social over the internet? as in active text communication? No. Exception: A guild that consists of you, your mate, and maybe a few very selectively picked friends who know there's a five year old trying to read their words. and even that's pushing it.

If you're jus tletting him poke around that is cool.
I let my 6 year old brother create a toon to play with (i'm 24 btw, he is adopted). he always wants to play. So of course, he picked a gnome and he said he wanted to be a mage so he could throw fireballs.
So basically i've taught him to right click the wolf, and then "press one to kill it." he doesn't care about leveling or questing or anything. he just wants to do what the big kids are doing. i've found that if i let him play for 20 mins or so, he'll go back to whatever else he was doing and stop being so itchy to play. ha
so, yeah, i'd say create a toon for you son. my instinct would tell you to pick a warrior or something so he can jsut beat on stuff like the above poster said.
At least at first, just let him go around killing kobalds or whatever for awhile and see how it goes.

I *would* have no problem with your kid playing WoW... but please make sure he is put on DND and removed from all public chat channels. The amount of obscenities and hate speech that goes on in general chat and trade chat, and even sometimes localdefense, are really not suitable for 5-year-olds.
no offense but i'm 17 and my mom has asked me to stop using language and saying kinda harsh things in the game
look this game is for teens and not kids

I'm not sure why you're attacking me. On both of the servers I have played on, both general chat and trade chat are cesspools of profanity and hate speech, people are nasty in /s, and you receive nasty tells from people if you do something they don't like. I suggested measures to prevent exposing a young child to such things before they are ready, nothing more.
I'm going to go against the grain for class suggestions though: If they want to melee, have them play a paladin. That way the kid can learn to heal themselves in between battles. My experience with young children and games is that they aren't patient enough to wait for food to heal them.
Also, if it's an alt on your account, deck the kid out in full heirloom gear. Trust me, they'll have more fun if they get to be powerful, and heirloom gear + enchants lets them do just that.

Heh, I fancy the notion that just a few hundred years ago fathers taught their sons how to work the land and how to become craftsmen - and now they are teaching them how to play WoW :)
That was complete offtopic, but the idea makes me smile.
