Will it be possible in later content to hit a passive unhittable (102.4% chance to block, dodge, parry, or be missed.) or will Diminishing Returns screw us over too much for it to be worth it?

Block rating isn't affected by DR, so it's theoretically possible.
Whether or not the gear will be there is the question.

Unbuffed in my current gear I have 22.67% dodge, 20.91% parry, 14.03% block, and 10.8% miss. That's what my character screen says. But throw on my raid buffs and I get a ton of dodge from all the agility buffs, and that is enough to put me so close to 102.4% that I don't even really care to see if I'm there or not. Horn of winter, mark of the wild, blessing of kings, agi/stam food and agi/stam elixirs and I get somewhere around 4% more dodge in agility, which is not affected by diminishing returns.
That is right now. In later content, it will only go up. Yeah in later content as we get gear with more dodge and parry on it, we will need more dodge and parry to get 1% more than the last 1% but that doesn't mean it will go down.

What does it really matter anymore? Pre- Lich King, 102.4% was to avoid crushing blows of which there are none except from mobs 4lvls above so it's nothing really to worry about anymore.

In Lick King, 102.4% is the point at which you will never take an unmitigated hit. It's not necessary, but definitely worth shooting for.
Assuming he means what I think he does, by passive unhittable he means without hitting Holy Shield. It was possible during TBC, however I do not believe it will be possible in WotLK. Blues have already stated they think tank avoidance is already too high, and plan on either reducing it on gear in the future or tweaking diminishing returns.

It is not about removing crushing blows, it is about mitigation.
