For a deep (
56/0/15
) Affliction warlock, what is an acceptable amount of haste to make the rotation more "smooth"? Mine is somewhere in the low-mid 300s, around 10% or higher. Should I stack more, or do I have too much, or, could it be, do I have the right amount?

There are no magic numbers for any stat that you should aspire to except for the hit-cap and even that varies according to your build and raid make-up.
I know that doesn't seem like a lot of help, but there really is no easy answer.
You shouldn't "stack" any stat, you should compare items by the stat weights that are appropriate for your build and gear level and go with the item that scores higher.

When I was at the 300~ level of haste I had a horrible time dpsing as affliction.
Now that I'm sitting just below 600, my rotation is much more productive.

I'd be worried that if your rotation feels smoother or easier it's because the extra haste has allowed more "slack" to creep into your rotation and you're not getting as much benefit from it as you could be.

I run with ~300 haste and feel that the stat points are much better spent in SP. SP is worth 1.5 per point while haste is ~8. (Numbers from EJs Aff lock page) Although it is the 2nd best stat for aff locks, i would only drop sp for at least double the haste and an Ilvl higher.
