I'm wondering, with my gear, would I be able to tank regular Lich King content. I'm in
all
quest greens, with mostly +crit and +haste. Going to start tanking, I hope, because on my server there is a dire need for them, and healers as well (though I suppose that could be the same on most realms).
If my gear needs a little bit of a buff before starting to tank, do you think that in the same WotLK quest greens, I could run level 70 heroics as DPS to pick up a few better items to make things smoother?

It's doubtful that you could tank. First, you have no +def at all. Bosses are going to clobber the $%^& out of you. Second, your damage even with your DPS gear is pretty low, so you probably aren't going to hold threat very well.
As for running 70 heroics in that gear... well, you're going to get stomped out unless all the other players are geared MUCH better than you are.
Don't take this the wrong way, I'm not trying to insult you - you just have a long way to go before you're at tanking status. Yes, DK's can tank - but you need the right gear
I would respec if I were you as well. Start with the 5/5/5 build, if you aren't sure what that is - use the search function.

I figured as much about my gear, but the point is that I need to gear up, and the only way to do that (since I've only got plus or minus 500g) is to run dungeons. Which I can't do because there are never any tanks or healers available. I suppose I could just wait until I ding 80, but in all honesty I get so sick and tired of questing that I want to pull my hair out.
Any suggestions for lvl 70 tanking gear? Of course I've read all the stickies, but those cater to being level 80. And I realize this website is a huge database, which I search all of the time, but I just need that extra little bit of help.

Just do normal dungeon runs until you get a decent amount of gear that stacks defense, and then from there you'll progressively gear up until you hit 80 and then at that point you'll be ready to tank some heroics.

If you want to tank, then the first thing that you should do is suck it up a little bit and spend some gold, or farm and craft the items yourself. Here's a list of good starter gear for tanking:

Eventually you can easily upgrade into a full set of Tempered Saronite (unless you grab some tanking items in instances which turn out to be better) :

The boots you could probably replace fairly easily, but that is a very nice chunk of stamina. The helmet and the destroyer are two of the best pre-raid items you can get for tanking. I'm having trouble finding anything to replace them at this point, but I don't run Naxx10 even very much on my DK.

Cobalt Items: Cobalt Bar x37
Tempered Saronite Items: Cobalt Bar x20, Saronite Bar x74, and Crystalized Earth x3
Titansteel Destroyer: Saronite Bar x8, Titansteel Bar x8, Frozen Orb x2

the issue I believe is getting the tanking gear, which mostly drops in instances. Obviously if the op is not actually tanking the instances, he's going to have a pretty slim chance of getting the gear.Get to 70 and buy the blacksmith set. It's so inexpensive that its unreasonable, probably costs max like 40g for the whole set, and any blacksmith picks up all the recipes from the trainer.

However, thank you all for the good advice. It is very hard to get a run going, let me tell you.
Had no idea about the Cobalt set; I was going to aim for the blue Saronite, but the complete set is 4 levels away. Hopefully I can get the Cobalt set for the low-low price of 40g, that would be swell.

Thank you for info on the Cobalt set, hadn't even considered it as a viable option. I was hoping to just kinda pick up pieces of gear as I went through 70-80 reg runs. My only question is will the Cobalt set last up until 80 and WOTLK heroics? or will it all get replaced somewhere in between? I ask because I am currently running an unholy dps/tank hybrid and find myself running as dps more often than not, (because of my servers long standing lack of tanks, many that have an 80 main are now lvling tanks) keeping me from probably acquiring reg WOTLK dungeon tanking loot along the way with my available time to play.

At entry LK instances, bosses don't hit hard. Defense is not a priority when a boss crit is only 33% of 15k. At this point, his priority is to stack stamina. It is very difficult to heal someone crit capped with 10k health, it is not difficult to heal someone who isn't with 15k.
Only near lvl 80 instances is the crit cap a priority. This is mainly due to the fact that boss criticals are around 80% to 90% of a tank's health where healing through criticals is an almost impossible task.
For gear, the quests in Borean Tundra and Howling Fjord offer 4 flavors of plate gear: Spell power plate (useless for Death Knights), pure DPS (no stamina), high Stamina (this is what you want to collect), and dps/Stamina hybrid gear. Currently you're wearing pure DPS gear and its probably not going to sit well with your healers. Pick up and
keep
the high Stamina quest gear if you want to tank. Gear doesn't depreciate so it doesn't cost anything to hold it for an extra week until you find better gear. Holding extra gear may prevent wipes and eventually
save
money from durability.

The avoidance Def gives you is what is needed, not the uncrit.
Believe me, I've tried to heal plenty of new DK's who think that they can tank because they wear plate, and it's a disaster.

No, the Cobalt set won't let you tank heroics. You'll have to upgrade into Tempered Saronite, plus pieces from regular dungeons. I think with my full Tempered Saronite I was still 35 defense short or so. Then they gave us the Gargoyle rune, and that made me happy. You'll have to work for a number of items from regular five-mans.

I'll have to disagree that defense is not a priority. It increases dodge and parry as well. If you can't hit 14-15k health at level 70 with the Cobalt set, you're doing something terribly wrong. I spent the gold and put +18 stam kits on each item I could, and the basic +agi/+stam leg enchant. I did this for both my cobalt and my tempered saronite set. Anyone can
easily
get good +def while maintaining high health and the ability to put out threat.
Isamber is fairly correct, by the way. A lot of items are geared towards our shield bearing brethren, and we sure don't want LEATHER gear. Don't hesitate to grab a shield bearer item, however, if it is still an upgrade. I wore the quest shoulders from Nexus for a while. What the crafted tanking items let you do is get to the 540 defense mark easily, where you can start gathering items with avoidance stats. You'll eventually be able to switch gear around to gain parry and dodge. Honestly, as long as you work towards your tanking set, the stam, defense, and avoidance will come naturally together. It's just a matter of working the pieces together so you stay 540+ on defense.
And remember! It doesn't hurt to go over 540 defense. It is
not
a cap like many say it is. It's merely a minimum. Only at 540+ it becomes more of a priority to get more stamina and avoidance, and after that threshold, avoidance and stam become desired more.

Oh, true enough. However, a lot seem to orient more towards blocking things. IE; shields. IE; not DK's. Not saying there aren't DK tank quest items out there... they just don't seem to have as many.

Update. Have the Cobalt set. Currently sitting at right around 13k health unbuffed in Frost presence.
Ran UK for the first time (ever), tanking, the other day. All was going well until the Prince's skeleton adds made my druid healer (lvl 68 ftl) start running around like crazy. It was too bad that I could only DG one of them; sigh. And then our 3rd DPS got disconnected. Soooo, an 80 Paladin from my guild came in and, since he pulled aggro anyway, became the tank. I had the 2nd most DPS (according to recount, and excluding the Pally), in tank gear and going through my tanking rotations (single or group rotations, respectively). Pretty disappointed about the run, but I did get the tanking necklace quest reward, which made me happy.
Ready for another run, and hopefully I wont have to rely on our fifth man being 80 and taking over.

EDIT: I had no problems with holding aggro, vs heals, 2 combat rogues, and an enhance shammy.

How I deal with the skeletons is I know when they come out, and about how long they take to respawn. I can time it to pestilence the boss with a blood boil followed after, which will usually hold them while the DPS clobbers them. I can also time laying a DND under their bones right before/as the respawn. Since I'm Unholy, I can also throw up Unholy Blight to grab minor threat on them till I can DND and/or pestilence.

I can see how that would work. The biggest problems were a.) it was my first run and I didn't know about them and, b.) my heals running around like a chicken with his head cut-off.
Now that I'm ready for those bony bastards I'll be able to take 'em.

The cobalt set and the heavy borean armor enchant are both crafted. In general the high stamina plate pieces are easier to obtain if you're low on gold. It is a completely viable alternative.
