the simple answer is to use addons. healbot or grid (usually with an addon called clique) are common addons for healers and you should definitely take a look.
if you want to heal without addons (which i wouldn't suggest) then you would have to click the portrait of the character you want to heal to target them and then cast your heal spell. in a raid you get access to the entire raid's portraits by dragging each group out of the raid pane and onto your screen. there is also a toggle in the interface options to make the portraits show who is out of range.
overall i really wouldn't suggest that you heal without any addons. blizz have admitted themselves that the default UI lacks all the information that healers need to heal effectively. healbot works very well without a great need for a lot of customization so i would suggest you download that and see how you go.

I heal with the WoW default Raid UI and I am one of the best healers in my raids. It shows who has agro, who needs a decurse/depoison and who is in my range. My raid leader makes it easy on the healers by grouping similar DPS types together. I do have 3 heals bound to my mouse for easy click healing. Anyone who says you can't be a great healer using WoW's default raid UI, just isn't that good to begin with. My raid leader is well aware that I do not use any healing addons and he would never leave me out of a raid because of it.

Again, relative. Your definition of 'great' may not match other's definition.
There are many many reasons to want to streamline one's healing UI using addons.
They are frankly too obvious to spend yet
another
thread explaining.
