Confused on DW Tank fallbacks

Keep in mind those dw dps specs that perform so well rely on alot of endgame armor that has boatloads of hit. As a tank you won't have nearly as much hit to make it work, and you would have to sacrifice alot of tanking stats to reach a dps'ers hit rating level. The 2H tank requires alot less hit, and therefore can focus more easily on mitigation stats.
Think about it this way. As you grind your way up to 80, if you ever compared dw vs 2H at all, you will have noticed 2H always puts out more dps(don't go by gut feeling, recount it; i did pretty often cause i love dwing, but it was always lower, so i ended up just sticking it out with a 2h). There just isn't enough hit rating on leveling gear to overcome the gap. A dw tank will be in a similiar situation: in order to fufill his primary duties of stacking enough mitigation/stamina, his hit will not be sufficient to overcome the gap between a 2hander and dwing. Therefore 2H is better, as you will put out more damage still.
Parrygib isn't the real reason, otherwise warriors would be pretty !@#$ed constantly.

When you compared 4% avoidance to 2% stamina, you really should have said 1% avoidance vs 2% stamina, since that's the difference between stoneskin gargoyle and swordshattering.

We already told you why it doesn't work as well and you don't want to believe it. All i can say at this point is try it out yourself. Go smack a dummy around with tanking set + dw, then go smack a dummy around with a tanking set + 2 hander. If you can find the dw to put out more dps then the 2H while wearing tanking gear then all the more power to you. There's countless numbers of other people who already tried first hand and know the answer. In the end, there isn't much point in theorycrafting; its better to see with your own two eyes.

True, but at the same time you are gaining 60+ defense from having two actual tanking weapons, so the 25 defense rating which I assume you are refearing to that gives ~3% avoidance, is over matched by that. so on top of having more def on your weapons, you would prefer to put on dual sword shattering for an extra 4% avoidance.
so in the end, it comes down to whatever sta gain you would get for choosing a 2hander over the 2 1handers, but again... like people in favor of stone gargoyle like to point out, the extra defense makes it so you can gear defferently (ie more sta items). that idea is just multiplied threw DW.
No. Stoneskin Gargoyle gives 25 Defense, not 25 defense rating. At level 80, that comes to about 120 defense rating. I think you'll be hard pressed to find those stats on 2 1h weapons.

Whats the point of DW in the first place? To get "true" tanking weapons with defense rating n such. Well what are those stats for? To reduce the amount of damage you take. Well in the process you just negated all that mitigation from weapon stats because you now take more damage from countered parry's.
If you wanna tank, get a 2H.
If you wanna DW, DPS.
Its like a prot war complaining he cant tank with a 2h. Its just how the class mechanics work.
Also blizz has stated they dont want DK's to tank while DW, so if by chance you and too many other people get it to work they'll likely just nerf it so its no longer viable at all.
