The reason people don't take DRM and Reaping at the same time is that it's not really needed.
Example. I'm an unholy DK. My main nuking strike is Scourge Strike (why you don't have that skill is puzzling, btw).
Because my main attack is Scourge Strike (Obliterate also fits this example), I don't mind having just Frost and Unholy Runes. i'm going to use them for my main attack. They don't need to be Death Runes. I use Reaping so I can get rid of Blood Runes since they are used for things like Blood Strike, which doesn't do great damage for Unholy DK's. I'd rather the blood runes be Death runes so I can do another scourge strike.
If I'm a Blood DK, my main attack is going to be Heart Strike and Obliterate. I use DRM so my Obliterates, which I'm going to be using anyway will change the FU runes to Death runes, thereby giving me 6 Heart Strikes when all runes are up (2 blood, 4 death). I don't need Reaping as a blood DK because I want blood runes, I don't need them changed to death runes.
I think the reason you may be confused is because you didn't take Annihilation or Scourge Strike, so you don't have a multi-rune attack. You mentioned Death Strike, but if you're tanking, you really shouldn't be using that skill (unless your Healer is absolutely horrible).
If you want to do some unholy tanking, here's an example of a spec with some points to move around if you want.

hello i currently solo alot and with this spec find is vary fast almost no downtime and also works good with groups. this is my build

my current rotation for solo is IT, PS, BB if single target pest if multi mob then BB, DS, BS i can only pull off blood strike if there is a solo mob but then i have duns of RP to burn before i start the rotation again and most of the time the mob is dead before i even through a death coil in there.
i have not got a chance to tank much yet so im still wondering what kind of rotation is good for that and help would be good.
my opinion? drop death rune mastery from blood.. pick up scourge strike and unholy blight, and put that last extra point in dark conviction. the extra crit% is nice. scourge strike will be probably your 2nd - 3rd highest damage dealer. Unholy blight is GREAT for AOE threat especially if your DnD is on cooldown or you find yourself in mid-rotation and don't have the runes up for it.. (it's also hella nice for things like H-HOS in that escort gauntlet. it helps keep those adds on YOU instead of going after brann)
other than that, your unholy tanking build is almost identical to what mine was. i switched to blood, and i DO like the imp. rune tap/vampiric blood combo from it for "oh s@#$" situations, but i think i'm gonna go back unholy because it's much easier to generate threat, and it does more damage. (i am not comfortable using the frost tanking rotation.. just my personal preference)
