I'm a particular fan of Blacksmithing. The (currently +32 strength, soon to be +40) you can get from it is pretty decent. It may not be on par with the +27 strength gems you can obtain from jewel crafting, it is rumored that eventually some very nice weapon smithing recipes will be released, offering weapons that should carry the Blacksmith through most end game content. Vanilla WoW and Burning Crusade both offered a "champion of sorts" seen here.

http://www.wowhead.com/?item=12790So it's not unlikely that we'll see a Titanium, or Titansteel Champion in Wrath of the Lich King. I can imagine the proc off the new sword would be around 300 strength alone. But that's just my two cents.

Theres a sticky in the proffesions page that gives you a list of all the BOP pro's for every proffession.
In my situation, i want the best tanking stats i can get so this is what i saw:
Mining: 50 stamina
Alchemy:
Indestructable Alchemist's Stone 75 stamina, 50 dodge rating, 40% more health from pots
Enchanting: 2x 24 stamina ring enchants = 48 stamina
Jewelcrafting:
Figurine-Monarch Crab 63 stamina, 2x sockets, use effect with dodge rating
Gems with 11 more stamina or 7 more defense/dodge/parry rating
Inscription: 32 more dodge rating via shoulder inscription
Blacksmithing: 2x extra sockets for 81/60 stam or 54/40 def/dodge/parry rating depending on if your second proffesion is JC or not.
Leatherworking: 50 more stamina on a bracer enchant
Engineering: Best helm in game (if you dont mind the goggle look)
Sonic Booster 81 stamina

Me personally, i really dont like the goggle helm look, and theres a JC and alchamist trinket that is just as good as the engineering trinket. Enchanting/Mining/Leatherworking give only minimal stam bonus that is greatly shadowed by other proffesions bonus's. 32 dodge for inscription is also a fairly week bonus from a proffesion compared to others.
That left me with alchemy, jewelcrafting and blacksmithing. Out of the three i think blacksmithing gives the least benefit. So i plan on going with JC and Alchemy.
