Using daggers for me.
I love that daggers are a viable raid spec now with Mutilate.
I have leveled with daggers since day one, and it is just awesome.
The other thing I love about being a rogue is stealth. I've played other classes, and although they have their benefits, being able to stealth past trashy mobs on assassination quests and sap the gaurds and what not was very fun for me :)
I have my rogue on a PvE server so I am mainly 51/13/7 mutilate raid spec. However I will respec for PvP when I want to kill things that where plate :D

I play a Mutilate PVP/PVE orientated rogue at level 60.

I am leveling up to 80 with my rogue, but I have always enjoyed the aspect of world PVPing and BGs. Mutilate gives me the versatility of killing mobs fast and dealing a lot of damage in PVP. My spec at the moment can be changed to either further PVPing (by putting more points into Subtlety) or further PVEing (by putting more pts into Assassination for

With the new (old now I guess) changes to Mutilate not requiring to be behind the target, it allows for you to generate a lot of combo points for Cold Blood Eviscerates to kill things fast. I picked up
Deadly Brew
for PVPing mainly, but it helps with the +50% damage from poisoned Mutilates to any target.
Simply put, I have a lot of fun with Mutilate. I am a big fan of
Akrios'
movies and watching him sorta inspired me to make a rogue.
If you are planning to make a rogue, definitely go combat at first though. Respec at 50 and then go mutilate.
Mutilate isn't one of those specs where you have the BIGGEST-CRITS-YOU-WILL-SEE-IN-YOUR-LIFE! kinda spec. Its a fun spec to play because you have to manage your energy and figure out when to strike your target.

For PvP, I have always found a Sublety rogue to be the most fun. You get a lot of things to boost your burst damage, and shadowstep is really useful. I see a lot of combat mace spec rogues while in PvP, and they do very well. I just prefer using the abilities you get through the sub tree.
For PvE leveling, I enjoyed combat swords. You can take on more enemies at the same time with all the abilities you get. Another thing to consider is that they combined the fist and dagger specialization. A fist MH dagger OH might be the better way to go, over swords. I have never done it, and I am not sure how many good fist weapons are out there while leveling, but it is something to look into. If your leveling up from level 1, you will find it easier to get a good sword than anything else.
With some of the more recent changes, Mutilate I find to be one of the best all around specs. At high level, using fast weapons makes it great dps for long battles. Using slow weapons will give you the burst damage you need for pvp, and trash mobs. When trying to level with mutilate, you can stunlock most anything to death. If you can find some good daggers for your level, a mut build might be the way to go. I would recommend looking at the sticky posts for a good build, and get the addins that they recommend.

I had always levelled as Combat w. swords, and PvPed as Subtlety w. maces, just because that was the done thing in early days of tBC. Now that Mutilate is usable with target facing you, and there's a lot of decent daggers about, I am levelling through Northrend as Mutilate and I am having so much fun!
Even equipped with mainly Northrend quest rewards I am getting insane crits, mainly from Cold Blood + Ambush or Envenom, but also a lot of Instant Poison crits. So even high armor/health mobs are dying quicker than ever. And so nice to take Sinister Strike and Eviscerate out of my rotation - such annoying sounds that I have listened to for too long!

I agree that Mutilate gives a lot of Burst damage and decent crits that happen very often. My original comment was meant for the idea that if you want really high flashy yellow numbers across your screen, then use Ambush or as you say, Coldblood Ambush!
In any case, Mutilate FTW
