When the Lich King dies, all of the undead suddenly burst into flames and start dancing to Tom Jones music.

The people saying they'd drop dead don't know what they're talking about, do the shadow vault quests and you'll see what happens when the lich king doesn't have influence over them anymore.
The thing here is that we don't know anything about the magic that makes the scourge living. Once turned undead they most likely must be killed again to actually "drop dead"...

the Lich King is killed. That's what this topic is about you say? No. I thought so at first, hence my answer earlier. If the actual
Lich King
- aka. Ner'zhul - dies, we can only guess what will happen and
my
guess is that the scourge will drop dead. What's more interesting in this scenario is that the Forsaken will do so as well if Sylvanas doesn't find a way to mimic the magic Ner'zhul used to make them "live" again.
That said... the
raid boss
that is killed is
Arthas
. The vessel. The Lich King may not die, and may even be invulnerable in a sense.

I think that the final battle will have something involving Jaina Proudmoore trying to get Arthas to see what he has done, but ultimately, he will still die. May it be after sappy love-like scene or just being overpowered by us heroes of Azeroth. =)
That's just my two cents though, hopefully Blizz will make an awesomely-epic ending to the Lich King's life once and for all.

I imagine that the minor scourge units would continue to function, operating under the last orders it was given until it is destroyed. The major units like death knights would be able to make their own choices. They could choose to continue to do evil, or fight against the Scourge like the Knights of the Ebon Blade.
That said... the
raid boss
that is killed is
Arthas
. The vessel. The Lich King may not die, and may even be invulnerable in a sense.
This makes the most sense to me. Kil'jaeden ripped Ner'zhul's spirit right out of his body and twisted and tortured it while it was in the Twisting Nether. The armor was just a "host", if you will, for his spirit, and Arthas is now his "host".
I can see a very touching scene where a band of mighty heroes defeats Arthas and Ner'zhul's spirit is driven out somehow. Just before Arthas dies, he realizes what he has become and done and begs the heroes (and his father?) for forgiveness...
Or it could be like the start of Diablo II where one of the heroes that vanquished the evil eventually falls prey to the very evil they thought they had destroyed...

I think in game terms, nothing will happen. Scourge will still exist in northrend, the plaguelands, and in that weird little instance in kalimdor, but when we talk to NPCs that technically exist beyond the lich kings defeat, the scourge will just be a bad memory. As shown in outland, undead can exist outside the lich kings control and without having once been under his control. Will Mal'Ganis, Kil'Jaeden, and Sargeras still alive, the burning legion will probably reemploy the abominations, skeletons, ghouls, etc. but the liches, non-ebon death knights, flesh giants, anything that doesnt appear mindless, will either attempt to take back their old lives similar to the KotEB, or just shed the bindings of undeath.
With the next expansion we'll either see Neltharion or Azshara as the big baddie and I'll assume the scourge will play a part similar to how the burning legion played in this expansion, they're there, you might see a few hints, but they aren't out in force.

I reckon that some big and powerful NPC person will get to land the final killing blow on the Lich King (will it be Mograine or Fordring, do you think?)... and the body of Arthas will die, and Frostmourne will be broken, and the world will be saved, etc....
...but said NPC will be possessed by the spirit of ner'zul ala. diablo.

when the Lich King dies he becomes rich fertile soil for player to "farm" for very powerful items and gear.
Or maybe both Hogger and Chuck Norris decend from the heavens and become the most powerful 2v2 team ever known to mankind.

At 1% the Lich King will bubblehearth, and will gank you in Orgrimmar when your checking the AH on your bank alt.

i think the scourge isn't evil( most of them without a will), they just do what the lichking wants becouse the dont got a own "will"
if the lichking dies the scourge wil got a own mind back.

The undead (well, not skeletons, they're mindless constructs) are the same as living people except that their minds are more easily manipulated. When the Lich King dies, if the Scourge isn't totally destroyed then those who remain will be able to choice their own path similar to the Forsaken.
If you haven't played WC3 and you care about the lore, go out and buy it and the Frozen Throne and play through them, because things make a lot more sense than just reading some wowwiki articles.
