Use the first helm with a
meta gem and keep it active at all times. The mana restored is 600 mana, which is very nice.
In the Blue socket, if you're struggling with regen I would go with
this and if you need a bit more throughput, use
this.
General socketing though:
If you need regen badly(this is keeping socket bonuses - I like to do it as a healer) -
red,
yellow,
blue.
If you need throughput badly and want to keep socket bonuses -
red,
blue,
yellow.
Generally, gem spell power, intellect and spirit. Once your regen is good enough without spirit and intellect gems, you can gem for more throughput.
For shoulders - I would go with
this because you can customise somewhat, with the socket.
Trinkets....It would be best using the
egg and
tears for a nice balance of throughput and regen.
To be honest, buy as much emblem gear as possible as soon as possible, it really can help!
Edit: As for your spec, I would go for something like this
this, but I've not played Holy in a few months.
2nd Edit: You may want to change your shadow spec to
