If your healer can't keep up, either the healer is undergeared, underskilled, or the tank is undergeared/underskilled. At least that's how I would feel if a druid tank said that.
As far as only frost tanking goes, I do fine as unholy, and I think that most people on this forum agree that unholy is a fine tank. You have to find your niche.
Frost and Unholy have 1 thing going for them when tanking. They have an extra AoE attack that blood doesn't. (Howling Blast or Unholy Blight). In my mind, if you're going to be a blood tank, and you only have one AoE, this puts you closest to the warrior style of tanking, with a little druid thrown in since they heal 4% of their health every 6 seconds from Imp LOTP.
But to talk about your belief that no one (yes, it's 2 words) is going to want a non-frost death knight, that may be contrary to what blizzard has stated in their opinion on DK's, but would it be so bad? You're now just the same as a Fury warrior or Enhancement shaman. Have you ever tried being a fury warrior? You get a lot of "oh, we need a tank." They're in the same boat. And that's running on the premise that only frost can tank (which most people here will disagree with).
I think blood hasn't found its tanking style yet, but I'm hopeful it can work.

Click it to see :D Anyway I have learned so far DK's can't tank multiple mobs. We can be a off tank and some times tank bosses. So far as a blood spec my self, I could tank bosses the better then the warrior :D PLUS We can swtich to DPS and do just as a goood :D Thats the amazing stuff of a DK

If you have reached level 78 and don't realise this yet, then you have done no tanking right?
Im a 75 Unholy build and i can tank 4 mobs and even had to tank 5 mobs as a sheep got too close to DnD and come out fine?
What do you base this on?

Truth... whatever spec you are, you should be tanking with Frost Presence on, not just for the increased threat, but for the 60% armour bump, which is a massive boost to mitigation and will make your healer's life much easier.
