Most simply don't talk about it in public zones, just within a close-knit guild or something like that. I personally (bi) just leave it out of my conversation, real life isn't really something to be including in WoW.

It's just not worth the hassle of bringing up in chat at all. If it comes up at all, it's in my guild chat, but we're just a small group of friends. If someone is honestly spewing enough hate to make me upset (which takes an awful lot), I may say something, but I generally leave the children to their games. Sooner or later they'll grow up or they'll make the wrong person mad when they forget they aren't on the internet and get whooped ;)

There's only one player on my friends list which I know is gay. There may be many other gay players out there but most people don't say it because it's no reason to inform everyone about their sexuality. On that note, there's not been many players I've meet who said that they were straight either, so they could all be gay for what I know.
The one player on my friends list I know is gay is the only one I've meet so far, which I know of. The way I found out was kind of funny though. The group-chat went like this:
warrior: Sweet, my bf brought me a beer!
paladin: Nice, so you're a girl then?
warrior: No, I'm a guy.
silence................
paladin: Oh... :)
It wasn't awkward or anything, just funny that no one really knew what to respond to that. After the group was finished with Mana Tombs, me, the warrior, and the paladin went to Sethekk Halls alone. They were both very polite and nice players and I've played with them both many times after that.
The point I was trying to make out out of this is that I don't see a reason as to why someone would say they are gay. Unless someone asks of course.

I don't think it should really matter, one's sexual preferences. Straight or gay. Granted there are quite a few people out in the real world and in WOW I am sure with the usual prejudices and ingnorances. As stated before in many other topics the general chatter tends to be imature and people often treat each other with a lack of respect. Now at the same time if you are looking for a gay community in wow you may want to check into it with some friends or a guild. I don't think discussing it on the open chat may not be the wisest as I don't think that WOW is meant as a dating site, political forum. I know it may start bothering me if things as politics and religion became a daily occurence on WOW.

No. None. Ever. Not a single one.

Um....Fail...I know gay people who play. I know of entire gay guilds. same goes for lesbian.
Just because people don't come out and say "I'm gay and play wow" doesn't mean that there aren't those gay people who do play.
Edit: I agree with Xen. Who cares if someone is gay or straight? It's not like it affects you at all. Sexual preference has no effect what so ever in the game, so it doesn't matter. Just like it has no effect on the world if someone is gay.
I saw a wonderful little pie chart about this today.

There was once an entire guild on my server which was friendly toward LGBT, and many of the members openly identified as having one of those sexualities. From what I can tell, and as the first reply noted, I would think they keep to themselves as there's a lot of immaturity regarding the topic, unfortunately.

I just felt the need to say that I'm keeping my eye on this thread. I think the discourse has been civil and on-topic so far, but if it turns into a political/moral belief discussion, we're sliding into the realm of off-topic land. We have a
Randomness
forum for non-WoW conversation. :)
Also, if you're interested in finding a guild of like-minded people, the
Guild Recruitment
forum would be an excellent place to start.

On a side note, I never knew that there were GLBT friendly guilds....that's pretty cool.
Funny thing about that, actually. Blizzard tried to force them disband for presumably for openly being friendly toward LGBT (I think); the guild took Blizzard to court and won. :]
