What are the new stats that are a must ahve as far as gear is concerned?
Well, they're removing crushing blows from the game. That means that you will likely not need to strive as much for that magical 102.4% avoidance number.
Additionally, tank gear was reitemized so that all plate tank classes (Warriors, Death Knights, and Paladins) have the same stats (Strength, Stamina, Defense, and Block/Dodge/Parry). Prot Pallies are probably going to want to stack as much Stamina as possible however, as a good chunk of threat is still going to come from Holy damage - which will be based on spell power, augmented primarily by a talent that adds 35% of your Stamina as SP.
Whats the best Crafting Profession for a Prot Pally to have?
Not sure that there's necessarily a "best" profession. I'd say avoid Tailoring, since it will probably be far less useful to a plate-wearer. The other crafting profs all still have their own little toys that make tanking easier.
How much Def do i need to have (whats the 490 goal at level 80)?
See Vyse's comment above. I would expect this to change some, given that a lot of the game's mechanics still seem to be in flux.

That's what they've said, and from what I've heard second-hand it's true. Again, that means that tanks are going to be able to stack a lot more Stamina than before - although obviously the avoidance stats are still going to be desirable; while they were primarily to help you avoid crushing blows, they also helped you avoid regular damage as well. Having enough dodge to avoid a 5k attack is just as good as having 5k more health to absorb it.

The MUST have profession imho will be mining.
I disagree, I think the ((1000/(weaponspeed*proc chance)) *1.9) TPS from tailoring is better than 500 hp.
and then i can think of several reasons not to take mining.

There's just a reason to take any profession, Herbalism, as seen in Project Lore, will give you HoT for yourself (lol)

There is an internal cooldown on the proc, though.
