Which to pick ret or prot, or maybe a combination?

Yes. Protection can handle multiple mobs at the same time. While leveling, Protection grinding (at 35, as that's when you have 5/5 Reckoning, or 42, as that's when you have Holy Shield fully talented,) is an alternative, a fun one. But with changes to XP rates, questing is the fastest possible way to get to 70. Questing is almost impossible with a full Protection grind spec. Retribution is the DPS tree, and the best levelling tree. And you'll never find yourself handling too many mobs unless you're being stupid, so single target judging - resealing - melee - (pray it was a SoC proc) works perfectly.
And for the most part, wearing the heaviest armor, having resistance auras, having access to immunity at any point you want, being able to heal yourself, you have it made. And Retribution has all the glory of making their enemies absolutely EXPLODE in a shower of crits. You can take on a single target very easily, and having an add just complicates things. You're better off running if you manage to grab more than 3 at a time. Like any class. Except you have a lot of abilities (that are all on cooldowns,) to help you adjust as things complicate.
Rogues have it pretty nice though. You might want to try one out, because once they have all of their skills, it's just too much fun to see a group of mobs, and just using all your tricks to kill 3 them one-by-one, vanish into thin air, then mop up the ones that didn't die the first time.
Playing around with talent trees and finding unique ways of playing the game is fun, but if you chose to tank at 70, you're going to have to conform. You're playing by Blizzard's rules at that point, and there isn't much freedom. You're aiming for 485 defense, 102.4% avoidance, and as much health as you can stack, because tanks need to know what they're doing. They're the group's leader, and when they're not performing (if they're taking crits, if they miss Holy Shield,) everyone's affected. Because that tank's dead.
Pre-BC Protection/Retribution was a very viable PvP spec, but with over three years of changes, it's died out. And no, it won't apply anymore.

It depends on your play style, I leveled my Pally through Outlands as Prot and I was able to get groups for dungeons when I didn't want to quest. However if you want to get to lvl 70 asap and skip instances for the most part, Ret is highly recommended, as you already have chosen.

If you like to run low-level instances, go prot. If you want to get to 70 faster, go ret. If you feel like respeccing prot, wait until the late 50s. That's when you start to get the Outland gear that really makes protection spec work.
