When leveling I chose skinning / mining. Easiest to make mad loot first, and then level your preferred profession based on what you wanna do.
Keep in mind that Enchanting and Leatherworking are arguably the most desirable end game professions for PvE content.

Two best for PvE are LW and Enchanting I believe. Enchanting kinda sucks to level, but if you do it right you will make a @#$% ton of money when you get to outland (just get it up to 300 and dench all the quest rewards that arn't upgrades for you and you'll end up with over 9000 enchanting mats by the time your 70). LW doesn't have a lot of good gear upgrades unless your really really new to 70 or decently far in endgame (at least where your guild is giving out hearts of darkness), but the drums are OP and it should provide some decent gear come wotlk (hopefully).
If all you want to do is make money skinning/herbalism imo.
Mining is good too I guess, but the times I've tried it it always seems theres a huge lack between copper and tin, then tin and iron. so I usually end up not leveling it past 65 or so and it ends up just being useless. Now I have a spriest alt thats 61, was 300 herb when i went into hellfire at 58, and just walked into zangarmarsh for the first time with 372 herb I think. Thats a lot of picking for a lot of gold, and if you end up raiding you can use the herbs for flasks/pots etc
Skinning is also ez-mode too, and once you get to nagrand you can farm thick clefthoof at a stack or more an hour, and because of LW drums stacks go for 100g on my server which is bank.

Skinning + Leatherworking. Until you get to the Outlands, the gear you make for yourself with Leatherworking (and not including the effects of Armor Kits) will generally be better than what you'll find or get as quest rewards. Always price check at the AH - lots of easily-made stuff will sell quite well for 1-3gp (mainly if it has bonuses to Agility, Intellect and/or Stamina. Strength & Spirit items don't seem to do well), which isn't so bad for the stuff you're just making for practice.
It does get slow later on (slowed to a crawl for me around 275. Currently at 285 and am going to be spending a couple of days farming Rugged Leather in Felwood :(, but it's probably worth it. Certainly more fun than just Skinning + Mining/Herbalism and buying all of your armor on the AH. :P

On my rogue I'm only level 38 but I have Mining (140ish) and Enchanting (just hit 220 today). I really love enchanting because of being able to DE all the quest rewards I receive that I already have a better item or its cloth/mail/plate. If he runs instances and tell the group your a enchanter and they will usually let you have the greens if you will give them some cheap enchants (thats how you level so win,win for you). Mining is good on my server, I mine EVERY node I come across, so that I can level without smelting it. The ore usually sells higher then the bars because of people power leveling mining. Also your not just selling ore but also the stone that BS's use, so your getting double money from mining. Skinning is another great choice if he wants two quick money makers.
