I have to side with Visas on this one. If you want to raid, be prepared to spec and gear for a USEFUL raid role. If you don't, spec for PVP and sit in the welfare gear line, I'm sure you'll be very happy.
I'm not suggesting that a fury warrior or enhancement shaman can't produce good damage in a raid, it's just that damage dealers are a dime a dozen. ANYONE can DPS.
Successful guilds have players who will re-spec to fill a role that's needed at the drop of a hat.
As to the original topic:
BS/Miner will be my professions. Blacksmithing has interesting potential now that you can affix extra sockets to equipment.

The devs are discussing putting in a system that allows you to swap between two talent builds for free, as long as you're out of combat. That would allow each player to have a dps (or pvp) and a tanking spec - or a dps/pvp and healing spec, so on and so forth. There's really no reason not to carry around a second set of gear to fit the other role - my feral druid has been carrying 3 sets of gear since about level 40.

This is one of the best ideas I've heard in a while. Most of the quest rewards/drops usually get sold/DE'd, this would let people keep more of the gear that they earn.
On the topic of professions, I'll be Insc/Ench. Stockpile those herbs/mats now, people! It'll save you time post-expansion.

If you roll a Warrior you HAVE to be Protection.
If you roll a Paladin you HAVE to be Protection.
If you roll a Druid you HAVE to be Feral.
If you roll a Priest you HAVE to be Holy.
If you roll a Mage you HAVE to be Fire.
If you roll a Shaman you HAVE to be a Restoration.
If you roll a Hunter you HAVE to be Survival.
If you roll a Rogue you HAVE to Combat.
If you roll a Warlock you HAVE to be Afflication.
Me I personally on my DK will never ever tank, but only because my main is a tank so I don't see the problem with people ever not wanting to tank, its annoying but who cares. I like being blood spec and I'm pretty sure some other people do too.
Edit: As a side note I think I'm going to do Blacksmithing/JC or something crazy like that.

If the only thing you want to do, ever, no exceptions, is DPS - then roll a pure DPS class.
Your great and all Visas, but your logic fails here. Some people will prefer a DK over a rogue or hunter or w/e. Saying that because they have the ability to tank that they are obligated to at any point and time just doesn't make sense.
Then you've clearly never played a Fury warrior. Do you have any idea what kind of crap they take for not being willing to tank? Picking a pure DPS class removes that whole potential drama. Dammit, now I'm taking part in the thread necro...

ok so this is what you are saying Visas is this..
If you roll a Warlock you HAVE to be Afflication.
and on top of that...
Rogues as Subtle are useless in raids, to where as Balance Druids are useless in raids, to where as Elemental Combat Shamans are useless in raids, to where as Arms Warriors are useless in raids. to where Marksmans Hunters are useless in raids, to where as Shadow Priest are useless in raids, to where as Destruction Warlocks are useless in raids, to where as Retribution Paladins are useless in raids, to where as Frost Mages are useless in raids.
and so who cares if some ppl who want to be a Damage Dealer, not everybody can be a tank. which leads to a few things.
1) Experience prior to tanking as a Warrior/Paladin/Druid, or other MMO's before WoW.
2) They know how but just don't feel like it in that moment.
3)They really REALLY don't know how, and would probably want to have somebody more experienced helping.
4) they are just plain lazy.
And I hate to break this to you but all classes can DPS - it depends on the skill of the person, and their gear, so your claim that to do DPS you have to roll a DPS is inaccurate, granted some classes seem more fine tuned to deal damage, but all classes can.
And each of them bring their own Buff and Debuff to the Group and Raid.
Me personally. I'll try to do my best at tanking as a DK, but if a paladin or a feral or a warrior says they can do better, by all means my friend have a go at it, I have 0 problems stepping down and let somebody better do it, if it means a successful run of the instance with little to 0 deaths I'm all for it.
Me luvs your sig...Me luvs that band...

Enchanting/Inscription ftw, both of which are required and unbeatable for raiding, as the only way to enchant your rings is to be a chanter, that wont ever be outdone whereas anything you make with other professions will eventually be outdone.
As to the whole argument up north about the tanking etc, if you roll a class capable of tanking and you don't wanna tank, then dont. The only thing worse than not finding a tank, is finding one who knows NOTHING about tanking. If you roll a class capable of healing and choose not to heal, good. The only thing worse than a know nothing tank is a healer who knows less! Play the role you wanna play, roll the characters you wanna roll. not everyone plays with the intent to raid, and not everyone who plays actually thinks ahead.
I for one won't be playing something i won't enjoy, and if I only enjoy dps then that's all I'll be doing. It would be nice if every druid, pally, and dk had a second set of gears set aside for tanking just in case we cant find one but that's not gonna happen anytime soon and im not gonna get my hopes up.
I don't see socket bracer and socket gloves being outdone. I'm BS mining. BS because it's the best, two sockets provides more tank or dps power than any other class, and mining because it's easy money. (It also gives 500hp.)
I've played a fury warrior, I kept a tank set and tanked when no other tanks were available. I kept up with tanking principles and did fairly well at it; I had people asking sometimes if I was prot. I play a dps DK now, same philosophy. It baffles me how many people prefer to sit around for an hour or more and then give up running an instance rather than run the instance in a role they don't particularly care for. I wouldn't force them, of course. I can't, and even if I could such people would probably suck at it. But it's a sad, sad thing to prefer waiting and keep others waiting because one likes to compete on the dps meters. Such people waste their own time and that of their party.
