I have heard of players using the S1 shoulders & the same goes for the shield, try to replace them with true PVE tanking items (which would be better items in whole) as soon as possible. Good idea & recommendation, though.
I generally try to sway players away from these items because it can make things...fuzzy & unnecessarily complicated for some players, but nevertheless -- a good pair of shoulders & a hard slot to gear for pre-Heroics.
Good idea & nice presentation!

In most situations
Glove Reinforcements
are a better effective health choice than
Heavy Knothide Armor Kit
for your hand slot.
I also find it somewhat odd to see
Gladiator's Shield Wall
listed as a more desirable option than
Dawnforged Defender
. While the PVP shield has a marginal advantage in effective health, it is at a significant disadvantage in terms of avoidance, and even has slightly less block value (given the equip bonus of the SSO rep shield). While the effective health school of thought is certainly the optimal choice for new content, people seem to forget that
effective health and avoidance are not mutually exclusive principles
. Having used both of these shields through KZ and Gruul's, it is my opinion that the
Dawnforged Defender
is by far the better choice, even surpassing the
Nightbane shield
if you don't need the defense for crit immunity (which you should not by the time you're at Nightbane).
Nice guide btw.
