Are you planning to heal or go shadow? And have you done any leveling post-shattering?
There are some differences you may see while leveling depending on which spec you choose and the method you choose to level (either questing/mob killing or dungeon healing). More often than not you will find you have more mana that you know what to do with while questing and possibly hovering around half mana for an entire dungeon depending on how skilled your tank is.
That said, you still probably won't need two of those trinkets to get by. I think I had two of the haste ones on my last caster and had fairly no mana issues.

No, but you probably will be smite healing anyway (there's no reason not to while levelling imo), so the trinket proc should be thought of as a bonus in instances - the intellect will scale with
which will be the main bonus from the trinkets. :)

'Mana problems' is kind of inevitable, it goes with the territory of leveling a caster.
You will not have mana issues with heirlooms.
Get the trinkets, it makes a difference from the +int. They're worth it.

You don't really need them. Get them if you have the spare JP, but you can level fine without. I only had enough to get one and I never had any mana issues at all while leveling.
Also I would highly recommend going Disc from 1-80. Not only can you use that build to solo quest, it's an amazing healing spec as well. You essentially have dps and healing rolled into one. Pre-60 you can essentially roll a shield + renew on the tank and you are good to go. Smite healing also works wonders in keeping the tank up.
