I actually have 2. I thought about it today when I had nothing better at work, and I really can't decide between either of them. The first of them is Ironman! I play a mage, and at the time of getting that I was playing fire in pvp. Capping 1 flag is an achievement in itself. But imagine when I took that 3rd flag, still no deaths, and start legging it out of the horde base, blinking along the way. Getting to the open field and just seeing half of the opposition starting to converge on you. Using all the skills you have, dragon's breath, frost nova, blast wave...anything that keeps them away from you whilst you keep running towards your goal.(Just want to give my personal disco healer a thumbs up here in case I win...without her it wouldn't have been possible!). I made it into our tunnel, the end in sight, and I just kept thinking 'Any minute now, something's going to terribly wrong'. But no, the speed boost was there waiting, and I capped, winning the match and gaining an awesome achievement. That day was just sweet.My 2nd one is for silly reason. I was standing in Shatt the day the pre-Wrath patch came out, and the achievement system had been implemeted. It was, of course, laggy as anything. It took about 3 minutes to run 10 metres. I was scanning the list, and came upon http://www.wowhead.com/achievement=964. Without thinking, I mounted up and flew up pretty high...I was going to do the whole drop and blink trick. As soon as I dismounted I though 'Lag...oh shhhhhhh' I hit my iceblock, nothing. Slow fall. Nothing. Last resort as I neared teh ground I tried blink...still nothing. I landed, and no death. I was disconnected. When I logged back in, I was alive, and with a complete achievement. Winsauce!(Hope this wasn't a TL;DR =( )

Higher Learning, got 7/8 done in the first few days of WotLK, then people started dripping into Dalaran and it became a lagfest... took me nearly 8 weeks to get the last, but I'm still proud of it. I think it also marked the time when I stopped having my hearthstone set in Dalaran :PRecently did it again on my mage for the sake of it.

Loremaster, easily. Not so much because of the amount of work put into the achievement (though that is certainly part of it, dang that took forever), but because of the title. I have been playing the game since Vanilla launched, and I have been part of half a dozen guilds in that time. In each guild, I quickly outed myself as a Lore Nerd, and in one of them the guild master even created a special rank of "Lore Master" for how often I explained the reasons (lore-wise) behind the raids we were embarking on (probably a good thing, since it is all I'm good at with raids...). That was during BC, and when I saw the Loremaster title in the Wrath previews, I knew I needed it. It took me just shy of two years, but a few months before Cata hit (and when it was still unsure if Loremaster would survive the transition), I became an official Loremaster. Sadly the guild I mentioned had since collapsed, but the title still stands to remind me, and remind my new guildies how much of a Lore Nerd I really am.
I'm an achievement seeker but favorite achievement has to be (pre-cata) and here's why:I've always seen myself a bit as a lore nerd, checking wikis and such and having come to WoW without previous Warcraft lore knowledge, I decided a project like this would be perfect! It took me a long time to get the achievement and I felt awesome after completing it. It was rewarding and allowed me to love the game even more. It was tedious at times but it was totally worth it. I felt like the achievement and title belonged to me considering how much knowledge I had gained through the grind about this wonderful fantasy universe.Plus it's always awesome to rub my title in other achievement seekers who haven't come around to doing the grind yet. :P
Ambassador, most definitely the best title, makes me feel like a boss.
gotta say What a Long, Strange Trip It's Been for me is my favorite it took so long to get and I met some great people along the way doing it also Kingslayer only for the reason we had 3 people up when he went and did his last move and RP started

I'm working on Loremaster. But I have the Jenkins title on 3 of my toons. I like that title. It does require some help to do and the video of how that got started is really funny.

Definitely the Tabard of the Protector. It gives such a unique reward from a great world event.
