I've got these two trinkets:
Jar of Ancient Remedies
Core of Ripeness
And I'm completing Tyrande's Favorite Doll, which 2 of these 3 trinkets should I use?

Jar of Ancient Remedies
Core of Ripeness
those. Jar is essentially the better version of doll.

I actually feel like Tyrande is superior to Jar...
It gives int and the Use effect restores more mana (it's 1 minute cooldown) so it gives 8400 mana back
Even if Jar gives like 500 spirit, it isnt always up (if I use it I loose 500 spirit for a long time and still have to cast 5 spells to stack it again (which isnt hard) but even so 30 seconds without the spirit I think it falls behind Doll in fights that aren't super long (well in Omnotron maybe 500 spirit would be a better choice)...
what do you think about it?

It depends on what you feel you need more, regen or throughput. The jar is worth the most regen of the three, but it does not offer any throughput benefit since it doesn't provide intellect.
If you find yourself scraping for mana in raids, I'd go with Core/Jar. If you're not really running out of mana, I'd go with Core/Doll. Since you'll have all three regardless, you could also swap them around depending on how you do in different encounters.

Remember, you have to use enough spells in that one minute to stack up the 4200 mana the doll returns.
And you can always just cast a renew as you wait on pull to keep the stacks up for Jar.

u wont loose stacks on jar. you can easily keep it up.

To store 4200 in Tyrande's you only need to spend 20k mana in a minute (which is quite easy to do), can't remember I fight where there's a period where I would spend less than that in a minute...
I tried it today and I think I'm going to stick with Doll/Jar because with my current amount of int the 1980 spirit bonus of the core increases my combat regen by 1800 which makes the use effect give 1800x4 = 7200 mana back - against the 2 x 4200 = 8400 of the Doll

I still feel Doll is a waste. Tsunami or Core are far better and they are either instantly stacked and start working right away or are on demand abilities in which case you don;t have to wait for a while to get the full benefit. Hell, you can ever macro the core to a spell few spells so it always procs when off CD.
I think Doll is a bad choice when you have the pick that you have.

tsunami....
working on that... anymore useless comments? You could've said Shard of Woe btw - even better

I understand your point, but with my UI I hardly miss the trinkets getting out of cooldown so that's not really a problem
I'm just afraid that my math might be wrong but I think that the 8400 mana that I get back from the doll are higher than the 1926 spirit from Core during it's duration, just wanted to confirm that
and btw I also start the battle with doll charged so it starts working right away also if needed

that was a quote for demortae... I'm asking about those 3 trinkets he said tsunami, in my view it was a useless comment
found a good post on MMO with the mana regen of each trinket:
http://www.mmo-champion.com/threads/813999-Regen-trinkets
but then again I've switched my Jar for Core used it and I only get 1800 combat regen per 5 secs which makes it 7200 for the 20 sec duration - against the 8400 from Tyrande's... Don't know how they got to higher mp5, anyone has an idea?
Maybe they're looking at mana regen, when evaluating the trinkets shouldn't we look at combat regen instead?
