Hello guys. I'm trying to get my Warrior all nice and shiny so that I can main tank for my guild. However, I still have the feeling my stats are not as they should be. Could you guys please check my character and give me advice?

I still don't understand the whole debacle on whether to get hit/exp capped or not. I don't like the idea of my attacks missing.

Your gemming is fine besides one gem your using. Which is the
Defender's Demonseye
gems. Use these instead
Fine Ember Topaz
.
Get a boot enchant, If you can afford it get
Lavawalker
as you won't be replacing them boots till Heroic Magmaw. If you can't afford that enchant use
This
instead.
You can change your neck, It's not the best you can get pre-raid. Get the
JP neck
it's a lot better and has a bunch of mastery to boot.
Also get
Avalanche
for your weapon it's more threat and procs from pretty much everything. Mending isn't that great.
Change Glyph of spell reflect with Glyph of Cleaving. If you don't have someone covering your Demo shout, Consider getting Demo shout glyph instead of Glyph of Intimidating Shout.
Are you running 10 mans? If yes keep the 8% hit as you 'might' need to interupt. Stress to your raid leader though that you lose a bit of avoidance/mitigation aiming for your hit cap and someone else should do it. If he can't find anyone else for the job don't worry about it.
If 25 man drop your hit. Threat should be the least of your worries in a 25 man guild run. No one should 'try' to out threat you on purpose.
If you can drop your hit and expertise (not running 10 man) Then use this quote below from Porcell. Sums up what you should do with reforging your gear.
Reforging, there are 4 types of items,
Avoidance / Mastery - Leave it
Threat / Mastery - Reforge Threat to Dodge
Avoidance / Avoidance - Reforge higher rating to Mastery, if equal reforge Parry to Mastery
Threat / Avoidance - Reforge threat to Mastery
As for Expertise; It's pretty useless in my opinion unless your aiming to get 'hard' cap which is unrealistic.

you might not like the idea of your attacks missing, but you are gimping your raid by reforging the way you did. you gave up 715 stat points of dodge & parry to get hit and expertise soft-capped; that is a really bad idea for raiding. and btw, you are still going to be parried unless you stack a LOT more expertise.
you are going to be harder to heal, and waste more of your healer's mana than another tank with the same gear but smarter reforging. to put it harshly (but honestly), you are making your raids harder on your healers than they need to be.

So should I just undo all my reforging then, or am I misunderstanding you now? Since it seems that my parry is vastly outrunning my dodge at the moment, should I consider reforging some excess parry into dodge and get the most out of my points considering diminishing returns?
Hatchet brings up an interesting point. We're doing 10 mans, so I really don't know whether or not I should be able to reliably interrupt. I mostly do it now in heroics because the average PuG can't be trusted to interrupt, but will the lack of a reliable interrupt in 10 mans not hurt my raid more?
And thanks for the advice already guys, I really appreciate it.

When i've done ten mans, The only time i had to interupt was on Nef adds. You only need 5% hit for them.
If you have say 14% parry and only 8% dodge try to get them a little closer 2-3% apart from each other.

yes, undo your reforging of avoidance into threat stats. after that, if you find your parry much higher than dodge, then go ahead and reforge some parry into dodge. you will find that your threat drops a bit, but that should only be an issue if you miss a few hits during the initial pull; just make sure to ask for MD and tricks up front. after your vengeance stacks, threat should not be an issue, even with zero hit.
also, keep in mind that if you do want to add some threat to your gear, look for pieces with expertise (like the helm from maloriak), as expertise is 2x as good as hit for threat generation. i would reforge expertise > avoidance, but you'll still have a bunch of expertise left over.
for interrupts, there may be some fights where the MT is asked to interrupt, depending on your raid makeup. in that case, i'd recommend just swapping out trinkets or weapons in order to boost your hit rating, instead of making the hit cap part of your survival set. come patch 4.1, it won't be an issue anymore as pummel will not be able to miss.

Okay, I changed my gemming and my reforging. Does it look good now or am I still screwing up somewhere in your opinion?

looking a lot better now - your healers will thank you.
it comes down to nitpicking, but if your next VP purchase is T11 gloves, i'd recommend either 50 mastery or 240 armor instead of the expertise enchant. also, i'd put a run speed enchant on your boots - either lavawalker if you have the gold, or earthen vitality if you're on a budget. if it was me, i'd also reforge the hit on your shield. these are all minor things.
since you're doing valiona, try to snag the 1h sword she drops - there's not much competition for it atm (lol combat rogues), and it's a great tanking sword. without running any numbers, i'd guess that a weapon chain is better than avalanche if you can't afford windwalker.
overall, you're ready to MT normal modes.
