Sr. was in Stranglethorn before he moved to Nagrand, but there aren't any zones added in Cata that could involve big game hunting.

Ok, Hemet Nesingwary was created as a reference to Ernest Hemingway.
Stranglethorn is more or less the African jungle, and Green Hills of Stranglethorn is a reference to Green Hills of Africa (although Hemingway didn't safari in the jungle).
Nagrand is more or less the African savanna, and Hills Like White Elekk is a reference to Hills Like White Elephants, a short story (which actually takes place in a Spanish train station).
Sholazar is back to the African jungle, and Snows of Northrend is a reference to The Snows of Kilimanjaro, another short story (which actually takes place in Africa this time).
Hyjal, Vashj'ir, Uldum, Deepholm, and Twilight Highlands don't have a safari theme readily available.

I dunno, the Uldum delta after you do the Harrison Jones quests is suddenly rather lush & jungle like. Not to mention the areas up in the NW corner of the zone A bit sparse, but definite greenery.

Yeah I'm actually kind of surprised they didn't put Nesingwary in here. He's always looking for new and exciting and challenging game and Vashj'ir would allow him to take his hunting to a whole new level.

Were the wannabe "Nesingwary" quests not enough for you? (*cough* Winterspring *cough*)
In all honesty though, I'd be thinking he's hunting for bigger game somewhere where we can't reach him. Either that or they'll add it into the Twilight Highlands or something.
