There really isn't a magic dps number we can give you. You say you run a lot with guildies, well ask them how they think you are doing. If you have a nice guild with a lot of experienced players that play with you in the same dungeon then chances are they can give better info then us.

In a set of badly itemized 333 (and a few 318 greens) I was pulling ~11k as Destro. I am by no means the best player either, and I have very little experience/skill with keeping the ISF buff up so a great player could probably be in the 12-13k range...
Although TBH, if you want to know what your true "maximum potential" is,
Sim your character
and add appropriate buffs/debuffs. This will output the amount of DPS a computer could pull in your gear on a tank and spank fight (zero movement).
(Also, I know that the pictures in the guide are broken. I might be working on a working guide sometime in the near future)

I can tell you that in the Argaloth fight in Baradin Hold I was pulling up to 13k as affliction(sucking with the ISF buff tho) and thats not even execute phase. That was with using my serpent JC trinket, and the demon soul ability for the SB spam with my demon *!@#$. Hope this helps a little.

At the moment I'm hitting about 14k as Demonology in a single target fight, heroic geared. 2000~ below that would be considered OK in my eyes.

bear in mind that most of the repliers in this thread are quite experienced warlock pve-ers, as far as i know. Experience with a class is probably the greatest contributer to good dps results. Like fingulfin points out gear that is poorly itemized for stats, and generally a total mix n match as gear will be at this point, also reduces your results. Maybe you even run with one or two pvp pieces.
get hit capped for heroics, replace recount with skada (seems more accurate and gives you a bit better results ^^ ) and try again. If you play destruction and pull around 10k in your gear on a boss fight id say its fine. And then again be quite assured that you will also improve later on. Oh, and simming your character i like stated above is fine, but wont make you feel very good about yourself :P

Just an off topic note on Skada. It's a good addon, but when you want to go into detail about stuff that happen in combat that other players or the bosses themselves did, then Recount is far more superior. Skada is a bit dodgy with some information.

Im sure youre right, but thats for the hardcores =)
oh, and another note to the OP: get a spell timer addon, that shows your debuffs and dots on the target and when its time to refresh them. Helped my dps loads. "sexy cooldown", "need to know" are two examples.

If you really want to go into detail about things that went on in combat, you need to run a DPS logger (my guild runs World of Logs). Recount is not a reliable source of information for in depth problem solving and theorycraft, and WoL can update immediately after every fight which means recount isn't even more handy for that sort of thing.

skada can do most things recount can when you get to know it and the rest can be done better with WoL.
one thing recount does which is really nice is the breakdown of the last few actions before someone died. this is info that you need in-game and skada doesn't provide. i use skada but i'm always glad one of our officers uses recount when we're learning a new boss.
edit: i've never got into the live logging thing. is that something that takes much time during the raids to maintain?

It is actually 100% automatic, and it takes hardly any system memory to utilize. Highly recommended ;) All I did to prepare for raids was boot up the program (executable JAR), click two buttons and then make sure combat logging was enabled in WoW.

One of the neater features (at least I think its neat) with WoL is that it shows you, graphically, when Hero/Warp/Bloodlust was cast, so you can see how much damage spikes during those times.
Really, there are way too many features that are awesome to list.
