I tend to send most of my gathered materials to my banker (to stockpile them or sell them if they're going for high high prices, so I can then purchase some later for cheaper, thus making money), and only level my professions when I'm sitting on a huge pile of materials.
The main draw of doing this is that I'd rather have 200 left over stacks of Light Leather as opposed to suddenly trying to level Leatherworking only to find I still need 5 more stacks (or heaven forbid, I suddenly need a handful of Heavy Hides...). As I can always turn those extras into either material to DE on an alt/guildie or pure gold on the AH, having excess materials is always better than having... not excess.
As for leveling professions at the same time: Its always going to be easier to level a gathering profession ahead of a crafting one, if only because you'll always find yourself lacking materials if you're trying to level 100/100 instead of 100/whatever you previously stopped at.
I tend to have alts who have professions that compliment my other characters, so I'll have one who is skinning/mining while another is skinning/herbalism, and then one guy is mining/jewelcrafting and another is skinning/leatherworking. So in that situation, the only mats I'm not putting to use end up being the herbs, which I either donate to guildies or gouge people on the AH (maximizing profit by minimizing undercutting).
A druid makes an excellent full on gatherer, thanks to instant flight form (and if its a Night Elf, Shadowmeld + Flight Form = godsend), however any class can really be a good gatherer... I tend to prefer stealth classes for my miners, simply because its easier to get into/out of a cave if I don't have to fight 400 rock troggs to get to the ore in the back. That being said, my main miners are a druid and a warrior, so hey... I really don't stick to any particular class for a particular profession.

I really like the add on Altoholic, it will show you what's in your alts bags, as well as any "bank toon guild vaults." Using Postal, having a guild vault (with at least 4 tabs) is very helpful. Also having multiple bank toons is wonderful (I have one just for gems).
I have 7 toons, and I've already maxed out alchemy x2, which is the cheapest to level. I've also been leveling JC x3, which are around 510 each, although you only really need to get those to 475 to do the new daily, then the rare gem cuts will get you to 510-515 (and you'll make money.
I've also been sending all green items I get while questing to my Enchanter for DEing, and he's at around 500 or so, as well as leveling BS to 515 (I need to start getting the vendor rep recipes for him).
All told, I spent 50k gold leveling up professions, but JCing has made back about 18k so far, and I feel in the long run it will be my most profitable.
If you don't want to spend money, I'd level up the gathering ones first, as putting those mats on the AH now will make you serious money. I however, hate gathering, and only do it when I'm completely bored (ie, once I have all 7 toons leveled to 85).

A) ++ for 'Altoholic' & 'Postal' addons. Also 'panda' for anyone who can mill/or D/E, amkes like much easier.
B) Depends. Assuming you're not in a rush, work out what makes more money. If you have access to J/C and alchemy though, level both of those to at least 500 as soon as possible, between them they provide massive opportunity for turning things into other, more profitable things.
If any of your other crafting profs make D/E-able items then max enchanting last, for obvious reasons. In fact, it's probably worth hanging back on enchanting once you get to the point when you can D/E all items - there's better money to be made selling the enchanting mats, and not much demand for the really high-level things yet.
C) Yes. A bit late now, but for the first couple of weeks after an expansion you can make crazy money from gathering. If you don't have a 'proper' gathering profession then even fishing works for the first week!
D) Hard to say, most of it has been 're-cycled' through the AH! At the moment prices are fluctuating enough (even on an overall downward trend) to make buying cheap mats worthwhile for me to level professions with, and then selling what I have stockpiled from gathering
at the right time
.
E) Alts have a nasty habit of turning into mains! And I don't just play for making money, there are other considerations, plus levelling a toon is quite a commitment, and if you're not really enjoying it you won't bother.
Anyway, my only 'gatherer' is currently a rogue engi/miner, which is not at all optimal for max cash while gathering (that would be a druid herb/miner I think), but is fun to play, which means I have the incentive to level, and to be honest gathering isn't a very good idea money-per-hour wise after the initial madness of a new expansion has passed anyway.
I'll stick with mining though, because unlike herbing & skinning you can still
make
something (bars) with very little time or effort that can end up being profitable.
