What would you spend a large amount of gold on?

For me it would be professions, dual spec. That's it since I'm just leveling my Priest :)

I just dropped about 18k last week. I had just finished up Loremaster and found myself at 8965 achievement points. So I went to the auction house and bought 9 non-combat pets for like 3000g in order to get my Skunk (+10 achievement points), then bought the Kirin'Tor ring for like 6800g (or whatever it was), and also bought the 800g and 8000g mammoth mounts from Hodir, just to get the Over 9000 achievement.
So, what would i spend a large amount of gold on? Achievements apparently...

People who put up insane auction prices do it for a reason.
It's to hope for casuals who accidentally buyout their item at that price.
This is easy for someone who is mass bulking something like cloth, with an easybuyout button. Auctioneer has all that.
You might think, who's stupid enough to do that? Bottom line is, there are people who fall for it, and even if you list it for weeks on end, there is still that chance that someone buys it, and just about makes up for any gold he could have made during those weeks.

I just picked up a pair of
Saronite Swordbreakers
off the AH for 1800g; that was about 300g less than normal. That's the last major purchase I've made, I think.

It's apparently not that difficult. I don't AH, I don't have a market cornered like Gems or Glyphs. I don't run multiple sets of daily quests. I do have 4 level 80s that were leveled before LFG, so they had quite a bit of quests done, and like I said I have Loremaster on my main so that's a lot of quests.
On the other hand, I've spent a lot of gold too. All four of my 80s, as well as the two other characters in their 70s (mage 77, paladin 71), all have epic flying and cold weather flying. I got my Traveler's Tundra mount on my main back in the few months after WotLK was released.
I'm still sitting on about 50,000 gold.

@Porcell; so basically just play the game and it will come to you? Sounds good. Tailoring/Herb should bring me some, and as soon as I hit level 80 all I'm going to do is quest, and queue for Heroics while I do that.

Insane in the Membrane
achieve (which I'm working on).

I spent almost 25,000 gold last Saturday on my warrior.
15,000 for Deathbringer's Will
4,000 for Coldwraith Links
1,000 for Aldriana's Gloves of Secrecy (cheap!)
1,800 for Titanium Spikeguards
~1,500 for all the gems and enchants for that stuff.

The richest players in WoW don't buy gold, in large part because buying gold is prohibitively expensive. Don't assume that people who have a lot of gold buy it. I know several players who are gold-capped on at least one character (the cap is 214k) and I know one person who is a WoW millionaire; none of these players buy gold.
Have they been playing the AH like forever? And 20k sounds a lot to me...
