Unless you're on an RPPVP realm and believe you're "striking a blow to the enemy and delaying their quest to destroy the Horde/Alliance" then killing NPCs is just childish. And there's so much to this game that isn't realistic, having unkillable questgivers/flightmasters/auctioneers really isn't going to put a crimp in anyone's playstyle. Except the childish players who get off making life more difficult for anyone but themselves (or the RPPVP realm players who really get into it).
It's childish to purposely inconvenience your rivals in a game?
When it's for no other reason than to be a #$%^? Abso-freaking-lutely.

It's an interesting proposal. I see both sides of the coin, and can also see the difference between the PvE- and PvP- minded responses. I tend to feel that for the most part, it's fine. However, there's a fine line between killing NPCs being okay and griefing people intentionally by camping certain NPCs.
I consider all NPCs to be fair game. However, I think that there's a fundamental difference in killing NPCs, and intentionally camping them. Even in RP, camping is considered griefing. Think about it- in role-playing, when you kill the fruit vendor, they're dead. The fact that they respawn is a game mechanic, not something that would happen in a real scenario. Thus, camping a light master, auctioneer or quest giver is contrary to roleplaying. Killing them and moving on to the next victim would not be.
On PVE realms, it's also harder to find the PvP solution in many cases, since people tend not to care about world PvP if it doesn't directly affect or interest them. Thus, if three or four players go and camp Crossroads, or Sentinel Hill, the likelihood of people going and cleaning out the invaders is slim- unless they are trying to play low-level alts in that area when it's happening. I know I've asked guildies to come and help out when someone was camping Sentinel Hill (I had several quests to turn in), only to be told something trite like, "Oh, just go to Loch Modan". They're not obligated to help, and I did have other options- but after thirty minutes of someone killing the quest givers in that area, I was annoyed.
I've also seen it happen more recently in Hellfire Peninsula. When I was on my Alliance character, Honor Hold or the Temple of Telhamat always seemed to be under attack. When I was on my Horde, it seemed like Alliance were camping Thrallmar or Spinebreaker Post. It wasn't just for a few minutes- sometimes I could be on for an hour and see "Thrallmar is under attack!" for much of that session. When you're on an alt's server with no level 80 to switch to, it can be frustrating. I think that the idea of elite boss guards spawning after a set period of time or NPC kills is better than making NPCs unkillable though.
Of course, on a PvP server everything is fair game. It's PvP- if someone's camping an area, the odds are that someone in the area will have a high-level character and/or be able to rally some friends. With that in mind, if you're on a PvP server and complain about PvP problems, I don't have any sympathy.
However, for people who rolled PvE and still get PvP griefing, it can be especially frstrating when you rolled PvE to
avoid
having to PvP.
One thing though- if you rolled PvP, that's fine. I have a character on a PvP server, and play occasionally. Those people that rolled PvE have every right to not expect PvP issues, and you calling PvE server players carebears is as childish and petty as PvE players calling PvPers "ganking bullies". To each their own.

I'd play on such a server.
1. I have no interest at all in PvP, of any sort, ever.
2. While there are certainly some cool people who PvP, it attracts some of the worst (and meanest) players.
nick: Slowing me down levelling does nothing for you. I'm not in conflict with you, ever. I just wanna play the game without being harassed. You cannot do anything to inconvenience me that is not purely mean behavior on your part. It does not benefit you in any way, ever. It just makes the game less fun. Emphasis there is on "game less fun". Game less fun = bad.

If Blizzard really wanted, they could make a fairly easy solution: Killing quest givers in the same area more than three times causes raid boss-equivalent guards to spawn nearby and chase the wanker out of town. Problem solved.
I like it.
To prevent people from using different characters or more players, just have the bosses (of Lich King toughness) spawn after the questgiver has been killed three times in two hours.
BTW The boss yields nothing.
This wouldn't make players stop killing NPC and Questgivers.. Honestly I believe it would have the opposite effect... Even more players would want to kill your questgivers because of the challenge or the "über 1337 awesomeness" of getting owned/escaping from such thing.. My 2 coppers..
EDIT:
Do any of you remember dishonorable kills? This is one of the things that prevented this sort of action (for the most part) back in Vanilla. When Honor and rank were the only things that got you something out of PVP. You kill a low lvl player (grey) or a low lvl npc (grey), then you got a dk (dishonorable kill, the only DKs worth mentioning in this game). Bringing back this system and getting rid of the ridiculous Arena system would make most of your problems go away and others that you're not even thinking of (little less ganking etc...)
Ahh yes, I remember those times :) I support this thing.. Although it wouldn't help that much, since I could just log on my DK and gank and don't give a second thought about PVP'ing in the future :)) Good times though, good times

Who is more childish, the troll or the nerdraging victim?
This question applies to gankers as well. When you nerdrage and complain about being ganked or trolled, you put yourself on the same level as the ganker/troll.
Like someone else said, as long as the person isn't killing NPCs or whatever 24/7, just go do something else on another character or do something other than WoW (GASP!) for a little bit.

The world is based on the premise of war, without the occasional attack on your home town, what would be the point of having enemy factions?
Battlegrounds and world PvP zones, along with lore-based conflicts and quests such as the retaking of Undercity and the airship battle in Icecrown Citadel, are enough for me.
Not that I care anymore - when someone is killing my lowbie's quest givers, I run my 80 out there and knock them out, and hang around for a bit. Until I had that option, though, I found it highly annoying.
