Priests can be a bit slow/boring. Although, I advise you to check the post on the priest forum about smite leveling. It worked for me, made me have no downtime at all from lvl 20.
I also considered making an 80 of every class, but I always hit a wall, when entering Northrend. The zones are just not fun at all. Even on main after WotLK came out, it too like 4 months >,<

Im not even trying but im halfway there already with a rogue at 61 and a priest and lock on the up and up. That would leave me a mage and druid which I would probably save till cata and roll them both as worgens. Good luck to you it can be a boring pain in the ass after your 3rd toon, different class hardly makes up having to do the same stuff over and over again.

I have a main 80 Mage.
A rubbish 80 Warrior (first char - didn't really know what I was doing)
A good 80 Paladin.
A fun 79 (soon to be 80) Hunter.
A 20 Warlock (next to be leveled to 80)
So, I'm about 40% of the way done.
I really like leveling the same places over and over, because then you know what to avoid and what concentrate on.
BTW: With the LFD system, I'm now skipping tons of zones, getting about half my XP from those.
