I mean it affects nourish, and regrowth, that are kinda used... plus a bit of gcd... on an other point, which is more valuable, haste or crit?

Much of a druid's role is raid healing with Rejuvenation. Because of the functionality of HoTs, there are only two ways to increase your output of that spell: spellpower (increasing the value of a single cast) and haste (increasing the number of casts you can perform in a given time frame). At the haste cap, your GCD (the absolute limit on how quickly you can chain cast spells) is reduced to 1 second, from 1.5 seconds. For every 2 instants you could cast with 0 haste, you can now cast three. The ramifications of increasing your output of spells by 50% should be obvious. This is also true of Nourish, due to its base cast time being 1.5 seconds.
Haste is more valuable until you reach a point where the GCD is reduced, with raid buffs and talents, to 1 second (soft capped), at which point its effectiveness drops off considerably because it now only further reduces the cast time of Nourish, Regrowth and Healing Touch. Druids at the haste cap generally gear (or, more accurately, gem) for spellpower, since it offers the greatest benefit for returns.

HoTs can't crit and >80% of Druid healing is usually done by HoTs. So crit is almost useless as a stat.
Haste is awesome, the gcd cap with full raid buffs is at 856.
Spellpower is the way to gem, pure SP in red sockets, SP/spi in blue ones and SP/haste in yellow ones if you are below 856 haste. If you are above (only possible in ICC HM gear) you go pure SP in yellow sockets instead.. Spellpower, int and sta will also be on all your gear pieces. For the two optional stats you want haste and spirit (since crit and hit are pretty much useless and mp5 is inferior to spirit).

You, haste, and 3.3: Resto Druid
Relevant excerpts:
Wrath of Air and Improved Moonkin Aura/Swift Retribution Aura Only
5/5 GotE = ~26.10% = ~856 Haste Rating
If you cannot reach the 856 rating listed above:
Wrath of Air and Improved Moonkin Aura/Swift Retribution Aura with
3/3 Celestial Focus
5/5 GotE = ~22.42% = ~735 Haste Rating
The link has details for variety of different possible raid buffs, with and without Celestial Focus, or with varying points spent in Celestial Focus.

Haste is very important as everyone else had said not to mention another thing,
Glyph of Rapid Rejuvenation
which I use as the primary raid healer in my icc 10 group. It is invaluable when trying to top off raid members quickly. Rejuv spam is by far the best tool we have and haste plays a huge part in that. Also, 1s (or below) Nourish's are badass.
