On my alt tank I use Bartender (button/keybind optionss galore) and Omen (threat). Other than that it's the standard Blizz UI. I should probably put the effort to set up a unit frames mod but it isn't strictly necessary for me as I only tank 5-mans at this point.

If you lose aggro on a mob, the nameplate will show it clearly and it's easy to target that rampant mob by clicking on the very visible nameplate. I have used it for some time now and it's excellent.
I find that the other addons I use when tanking are really only needed in raids (Grid, Omen, Skada, DBM) or just beef up the UI abit (Dominos, ShadowedUF, Fubar, etc).
At lower tanking levels, the only addon I would miss would be the Tidy Plates one.

Omen is superflous before you hit 80, imho.
And I used to tab through the targets, as well, but I found it was slow and prone to error. It was too easy to tab-target past the mob you needed to hit or the tab-targetting didn't include the mob because it was just a little bit too far away (when needing to target a runaway mob for taunting, for instance).
Experienced tabbers are probably much better at this, but for me, name plates became my personal tool of choice.
I also have PowerAuras in my toolkit, but it's far from neccessary, imho, and as the OP wanted a minimal setup, I skipped it.

The better solution to 'not liking nameplates' and 'tab targetting isn't perfect' is to use tidyplate's nameplates when you need/want them, and don't use them when you don't need them or they're otherwise a hindrance. The first room in Gundrak for example, where all the neutral little snakes pop up amongst the hostile big snakes. Or the beginning of phase 2 in Ony with the humongous number of adds.
Or hell, if you see the Blizz UI say 'losing aggro' or 'changed target' or something similiar.. you can hit 'v' and see plain as day what you've lost aggro on.
But these are the amount of mods I've considered minimal for my use (for raiding/heroic tanking):

DBM
I use a lot more than that, such as NeedtoKnow, OmniCC, oUF, Dominos, and TipToc (or something, tooltip replacement), gfont, but those are mostly for something aesthetically different. I have PowerAuras loaded, but I don't actively use it on my warrior since most of the procs that are I look out for while tanking are either covered by Mik's Scrolling Battle Text or aren't really even important. I'd definitely need to figure out how to configure that addon if I wanted to start raiding on my mage tho.

Sorry to pop in off topic but I felt a strong need to clear things up about Down's Syndrome. It is called a Syndrome for a reason.
Syndrome
: the association of several clinically recognizable features, signs (observed by a physician), symptoms (reported by the patient), phenomena or characteristics that often occur together, so that the presence of one feature alerts the physician to the presence of the others.
The physical manifestations of the condition are a result of an extra Chromosome. It was termed a Syndrome before the concept of Genes was introduced and is better described, with current understanding, as a Disorder.
It is in fact a social mistake to use "Downs" as an insult. Usually I pass over this stuff because you can't change willful ignorance over the internet, but I suspected a rush of mis-information.
As for Tanking add-ons: I agree DBM and Omen are the only real necessities. Get them early and learn their functionality to help when Raid time does turn up.

Omen is very nice, but you can go without it by using blizz own threat scale, but omen is easier to see.
DBM or similar addons are a great way to see what abilitys the bosses will use and how long their cd's are, so you more effectively can use your own cd's.
For multiple trash pulls tidy plates threat plates, as mentioned, is a nice way of seeing how your aggro is distributed, green for no aggro, orange for close to loosing aggro and red for you having aggro.
These 3 addons will take you a long way, when you become more secure in your tanking you can loose tidy plates since you will know what to do to maintain aggro on large groups of trash.
Omen will always be a useful addon for some fight when you need to be in a certain threat position.
