This has been bothering me for awhile, and I can't come to a conclusion.
TLDR Version:
Enchanting v. Blacksmithing in Cataclysm for Holy Paladins. Discuss.
Longform:
Originally I picked up Jewelcrafting and Enchanting on my paladin. I did this because I figured those would provide the best methods to make money AND get useful stat bonuses. I don't regret picking up Jewelcrafting, but I find myself questioning the usefulness of Enchanting everyday.
Enchanting doesn't earn me much in the way of money, partially because I do not utilize vellum like I should, partially because I never bothered to pick up the rarer recipes. This disappointment is furthered by the fact that the 46 spell power bonus on my rings pales in comparison to the 40 additional Intellect I'd get from the smithy sockets.
I've lived with that disappointment for awhile; I knew that spell power was going away in Cataclysm and assumed it would be replaced with Intellect, so it was a temporary (and moot) concern. However, it occurred to me a few months back that smiths will be able to reforge their armor and weapons, exchanging stats. To me, the sockets and reforging statistically outweigh the usefulness or profitability of enchanting, BUT this is speculative since Cataclysm's changes have not been solidified.
Alternative analysis: Currently blacksmithing is superior to enchanting for holy paladins. If I do trade enchanting for smithing, do you expect that I will regret it later down the road in Cataclysm?

Blacksmithing is only superior to enchanting because Holy paladins benefit less from spellpower than other stats, and Enchanting only offers that. Item points wise, the two professions are equal.
That last point isn't going to change: Professions are not designed so that one gives 50 itemization points and another 30. They're all within ~5 points of each other, to keep the personal perks balanced.
Now, it's possible that enchanters will again get stuck with only being able to enchant a sub-standard stat onto their gear, or on the flip side, blacksmithing will receive some arbitrary restrictions on personal runeforging, but until we know, very specifically, and after it's no longer subject to change, exactly what specific stats will be possible for the two professions, assume they'll be of equal worth. Since itemization points wise, we know that they WILL be of equal worth, or near enough as makes no difference.
Further, I think you're confused, although maybe I'm just reading your post incorrectly.

Correct, but I am talking about personal gain here. Sorry, I thought that was clear. I'm debating whether it's worthwhile for me to drop enchanting to pick up the 40 additional intellect from the smithy sockets. Statistically it is worthwhile, but I haven't been following the Cataclysm leaks to know what Enchanting will gain. I assumed that it would pick up Int and drop the spell power, but it was my speculation.

I'm sure there will be. There's a material cost associated with everything.
It's really not worthwhile to swap. Professions aren't game breaking. Even on EJ I've seen posters point out that the benefits between professions are more or less equal, or close enough such that spending several thousand gold just for the sake of 3 more stamina on a tank, for example, is a bit silly. Spellpower certainly isn't a
bad
stat, and also, the last major raid of the expansion is out and has a 15% buff available, which is only going to get higher. Swapping professions will offer a very slight benefit in the second (nerfed) half of Icecrown's life. It's been cleared with only a 5% buff. I'm sure it could be cleared with a 15% buff and absolutely no professions at all.

Oh, I'm not worried about clearing ICC. Clearing content is not what actually drives me to play WoW. I have sufficient gear to run ICC (or even heroic ICC 10), but I like experimenting to find different ways trick out my character.

This is why my Prot/Ret pally has BS/Enchanting. I wasn't able to make-up my mind so I choose that combo for my pally and got JC/Mining on another toon.
The pet thing is nice I think they did that do to alot of people dropping enchanting with the changes a patch or two ago.
Now the Reforge thing is going to be nice I can't wait to play with this during beta or when Cat. comes out. I'm still wondering if there do something special for the person that has the skill vs. people getting the items done for them. Maybe something like the way they currently do the L.W. leg enchants with LW having cheaper mats compared to what the other enchants require.
Now for enchanting if I'm correct (not always) aren't they also doing something to Ap. I think I remember reading something that it was being removed and that we would get our attack from other sources. If thats the case then the Ap enchant for rings would also need to be changed.
For that change I would like to see some more deverse changes like having ring enchants that will cover all type and classes. For example we know that Haste will be used alot in cat. so that to me would not be a bad ring enchant to have. Or if your a plate melee class having a strenght to ring enchant and so forth and so on.
