Why are you even worrying about it at that level. Get to 80 and start raiding.

I read enough that I can find decent sets to use, what I'm really interested in is some general information such as how many runs through level 60 instances (Strat/Scholo/BRS) I'll need to run in order to get these drops, and tips on how to optimize grinding for this stuff.

It's faster to just level, get the gear from leveling (the gear from outlands is MUCH better than the 5-man gear from vanilla) and get to 80. At that point, you'll find nice pre-raid guides giving you gear to farm from heroics.
Like kpsting said, "serious" usually implies level 80 raiding. "Casual" is normally applied to lesser progressed raiding guilds, even. So "serious" to most of the people on wowhead will mean either going for higher-rated arenas or pushing for harder bosses in ICC. Some may go so for as to say unless you're doing 25-man hardmodes, you're not a serious player.

If you are indeed moving from casual to serious WoW'ing, make sure you get all the expansions. You've played before and from your post I'm assuming you have around a lvl 60 toon? Well pick one that you enjoy playing, and level that toon to 80 asap. Read every sticky you can from wowhead and other sites like Elitist Jerks and follow their suggestions on talent specs, abilities, how to gear, etc. Try to understand the class completely, why they spec a certain way, why they enchant or gem another, etc.
From there run regular Trial of the Champ 5 man and regular ICC 5 man runs (Forge of Souls, Pit of Saron, Halls of Reflection) for some gear upgrades. Once you get some decent gear, run heroics till you have enough Emblems of Triumph. From there plan your upgrades accordingly and come back for more advice.
