What are some addon that would help out in tanking. I'd like to find something that would place my rage bar closer to my character, as well as cooldowns and such. I'm not sure what I need only because I'm not sure what is possible.

I love my IceHUD and MSBT.
ElkBuffBars for my buffs, tracks all my buffs, debuffs and procs in a configurable list..
Sounds stupid, but I find RicoMap (or any minimap mod that allows you to configure your minimap) extra helpful when I'm tanking. Throw the minimap bottom-centre of the screen and it's now part of the central area where the action is happening. I can check the positioning of my raid, my mobs, myself, without taking my eyes off the action for too long.

i use Pitbull for my health/rage bar, as well as the rest of my raid frames.
elkbuffbar for buffs, shouts, procs, etc.
quartz for target casting bar and debuffs.
i don't like any scrolling combat text - it adds clutter and doesn't give me any useful information that is not already covered by another addon.
if you prefer numbers to bars, try Digits for health/rage and satrina buffbars for buffs.

Pitbull to remove unnecessary unit frames, Bartender to cramp the actionbar together as much as possible, MSBT to keep the screen clean, Simple Buff Bars and a small addon to make the nameplates look cleaner - do you need more? :P

As for general UI i am still using X-pearl - yeah i heard that pitbull is better i just have no nerves to configure it.
Similar issue for me, really. Pitbull looks awesome, but the set up is just too demanding for me to be bothered. Plus, there's really not much wrong with the standard UI.
I would also recommend Omen3, by the way; it's fallen off the radar a bit, but I'm still amazed at its omission from any tanking AddOn list.
