A same level monster has a 5% chance to crit you. For every level over you, they get an additional 0.2% chance to crit you. For heroics, the bosses are level 82, so they have a 5.4% chance to crit. Raid bosses are 83, so they have a 5.6% chance to crit.
At level 80 you have a base of 400 defense skill. Each additional 5 defense skill reduces your chance to be crit by 0.2%. Therefore you need 140 additional defense skill (So 540 total on your character sheet) in order to reduce your chance to be crit by 5.6%.
This is the "soft cap" or "minimum" defense skill you need for raids. Defense still gives you additional avoidance if you are above 540.

Oh I see. Now I have a clearer picture of what the def cap(or shall I say the minimum) for raids are. Really thanks for the tips and insights.:)

Remember stacking defence past the minimum is not a bad thing either as it affects your block dodge and parry stats too (cannot remember the % per point right now).
Just don't go crazy defence stacking past 540, stack expertie, hit or other usefull tanking stats too.

540's a soft cap. more stats will help with avoidance too, but after 540 it is more pertinent to go with the raw avoidance stats instead of defense.
No it isn't. Defense is a fine avoidance stat even after 540.
You'll want to prioritize stamina, armor and threat stats more though.
