Elemental Shaman professions?

Well normally you take up a profession for what perks it can give you so here I'm going to list below the professions I think would benefit me and maybe you could help me out on my choice.
Jewelcrafting - A good profession for making rings and trinkets which benefit any class, my biggest complaint is there are no Jewelcrafting Trainers apart from those found in expansion areas making leveling the profession hard to skill up.
Tailoring - You can make bags (everyone needs bags) =), a flying carpet, leg enchants that give spellpower and Embroidery (back enchant I presume) but instead of that being an actual effect, it only has a chance to happen. =o Yes I'm aware Tailoring is all cloth but after all while leveling most intellect stuff is from cloth and having a shield will help out, it's the other stuff that matters most, right?
Leatherworking - From Leatherworking you can make Mail armoured gear, and Fur Lining enchants for bracers. But I'm disappointed that Leatherworking has no leg enchants with spellpower on it which is why I suggested Tailoring first.
Gathering professions - All 3 are good, I like skinning the most for the benefit of more critical hits, Mining I don't mind if I pick Jewelcrafting.
As for Enchanting and Engineering, well Enchanting is only good at higher levels making it a big money sink. Engineering uses too many item parts building just to get an item you want.
So I think the main choices I would have to decide on are either Tailoring/Skinning, Leatherworking/Skinning or Jewelcrafting/Mining.
Help me out.
