Actually, WoW will use up to two cores to play WoW, but

You can in fact tell WoW which two cores to use however, following info here:
http://forums.worldofwarcraft.com/thread.html?topicId=1778017311&sid=1&pageNo=1If it was installed on a single core system, and then copied over, the value mentioned in that link might not exist in your config.wtf, in which case you can try putting it in, to get WoW to recognize the fact you have more than one core.
Personally, since I'm on a Core i7, which has 4 cores with hyperthreading (8 total, 4 actual, 4 virtual), I let WoW use any two cores, except the virtual hyperthread cores (so every odd numbered core). I can fire up the task manager, and see that two cores come under load while using WoW, and as expected, only two cores despite 4 being set as available.

Edit: Only 2 gigs of RAM is indeed a little low, especially for 64-bit vista. I recommend you upgrade to at least 4 when you can.
