My advice would sound like: Dont gem for avoidance. Gem for Stamina and Threat. If there is a red socket you want to match, use an expertise+stamina gem.

The problem with gemming for avoidance is it only hastens how quickly DRs effect how much avoidance you get from stacking too much of it.
At lower gear levels it helps a bit to offset the amount of dodge/parry you get from gear, but as you gear up it would be wise to just let the avoidance come with gear and start stacking stamina to get a large hit point pool, maybe save for 1 or 2 socket bonuses or a meta requirement.
With the recent nerf to armor and health we are getting hit for much more and have less a buffer to make up for that, which is why it helps so much to stack lots of HP.
I myself am sitting at 59% avoidance and 34k hp stacking mostly stamina and its working wonders.

Imo you should never gem for avoidance as a tank.
While Avoidance is nice, it's still based off RNG, meaning even though you have !@#$loads of it, nothing says you wont take those 4 hard hits in a row, and with a lesser health pool that can be too fast for your healers.
Gemming for pure stamina reduces that the randomness in each fight, and it also scales well with Vamp Blood which is easily the best tanking CD for DK's out there at the moment. Even though you'll take harder hits you give your healers a lot more to work with, so 3-4 hard hits in a row is not going to hurt as much as it would if you were gemming for avoidance.
So imo, gemming for avoidance = relying on RNG = not very good.
Gemming for stamina = Reduces the randomness = better!
