staking defense helps you in spell avoidance, it makes your chance not to be hit go up when you bring up your defense rating. other then that you can just put on spell resist gear if the fight is all spell damage.
Spells missing is level-based only. Defense does not protect you against spells.

reducing the chance you get HIT is everything. Go read up on what defense rating does before you post an argument like this, and mis-inform these people asking for help. what do you think spells do to you when they damage you do they not HIT you? Or maybe you're just one of those noobs that run into spells.
You mean
The spell hit mechanic has been confirmed by Blizzard CM Eyonix. Base chance to hit is based on level difference between caster and target, starting at 96% for even levels, and going up or down from there, capping at a maximum 100%. Furthermore, the chance to hit is different for mobs (PvE) and player (PvP) targets.
That?
Defense's contribution to being MISSED is for physical attacks. Defense increases "miss" due to the difference between the Defense skill of the defender and the weapon skill of the attacker. Now if spells had a 400/400 skill just like weapons, then you would be accurate.
Spells used to be resisted, they only changed it to read "miss" so when someone didn't get hit with a spell, you'd know if it was due to level difference or due to spell resistance.

That's hilarious coming from you.

Yeah defense and block value does crap for spells.
What you can do is either up your Resilience or stack spell resistance. There's also some talents that you can pickup that reduce incoming spell damage.

Block value helps Shield do more damage to kill the source of the spell damage.
Resilience only affects DoTs, however spell resistance (via Auras) is very useful. Various Prot talents + glyphs helps out a lot vs. spells (20% spell damage reduction)

Nope. You gotta keep up with the times, bro.
http://www.wowhead.com/?patchnotes=3.2.0:
Resilience: No longer reduces the amount of damage done by damage over time spells, but instead reduces the amount of all damage done by players by the same proportion. The other effects of resilience (reducing critical chance, critical damage and mana drain effects) have not changed.
