I have been wondering about this for a few days now. Since I was a level 5 warlock I've been a miner/tailor. Now I am 80 and both of my skills are maxed (450/450) and was wondering if I could change on of my skills.
I was thinking of dropping mining for a profession like Jewlcrafting or Enchanting, but wasn't sure if those would bring in as much money as mining. I make a good 130g of titansteel bars I make daily, so I don't want to start losing money.
Then there's the money I would need to powerlevel my new profession. I have around 18k at the moment and not sure if having a new profession end in a deficit.
I know this also depends on my server, but each of the items (ores,bars/enchanting mats/gems) have their ups and downs in our Auction House.
Anyone have any advice on my situation or just want to say Im crazy and just continue sticking with mining?

I would say the gathering professions are far from the most profitable. They do make some cash, but not on a per hour basis- they take a lot of time to make a very small amount of cash.
Imho, Inscription, JC, and Enchanting all make better money.

id pick herbilism instead. its a lot cheaper then leveling up jewlcrafting and its a lot quicker to make money with then enchanting ( im not saying picking up enchanting is bad). i say its quicker because you can go out and farm herbs and put them on the ah directly but with enchanting and taliroing you either have to go out and farm the cloth/greens yourself or buy the cloth.greens off the ah and depending on prices of the greens/cloth and the prices of enchanting mats you may either lose money or gain a lot of money and it also takes time away from you because you have to de everything to obtain the mats and if you have a lot of them it will take time and you could use that wasted time to farm more herbs and make more money.
plus herb is just pure profit no money to level it up(besides paying the training cost) and you can sell everything at all levels of leveling it.
sorry for the run on sentance and bad spelling.

maybe not in 5 minutes but you can certainly make alot more with crafting proffs then you can with gathering proffs. i know that 10k in a week is not impossible, several of the guys who have alot of gold (50k+) usually have 10k/week in income. i want to see anyone beeing able to farm more then 10k gold a week.

Ya know....I'm a tailor / enchanter on my warlock. But the more I think about it Jewelcrafting and Tailoring would be a powerful combo for self buffs.

The power of crafting professions is 'driveby profit'.
For example, while waiting for one of my guildies to finish up his dailies and relog to other char to run instances with, I link my JC in /2. While the slowpoke gets around to logging his proper char, I've made about 100g. All without leaving dalaran, without really doing anything but answering to couple of whispers and clicking some buttons.
And if no one needs any gems cut in /2, there's always the AH. Scan for cheap gems, look around what cuts are in low supply and provide for the needy :) Although this strategy is rapidly tanking - now I can only make around 30-40g a piece this way. Week or two ago the raw materials were going 80-100g a piece, with readymade cuts selling 180-200g each.

"All gathering profession are the most profitable, maybe JC is better than skinning on servers."
^ Is completely wrong. If I flew for 24 hours around WG and Sholozar Basin and Icecrown, I might end up with 10 stacks of titanium ore. If I was lucky.
I spend about 10-20 minutes over the course of the day (5 min in the morning before work, 10 min after work, and about 5 min before bed) putting my gems up on the auction house. I've been making 4,000-8000 gold a day since 3.2.
