I am not sure what you meant by Stam-correct, but there are two very helpful tanking guides in the Helpful Threads sticky. Nystali's is great very basic information for beginning tanking, and Lynri's is a bit more in depth.

I like to use Defenders Code and Valor Medal of the First War. I always look at the "use" effect on trinkets before their static effect. I like to use trinkets as a filler cooldown along side UA and IF, especially now that all my cooldowns are 2min instead of 1min.

Trinkets are the only pieces of gear that gives you clickable buffs, so i take advantage of it.
Taking a mediocre static stat upgrade with a much worse use effect is an overall loss in my book.

i somewhat disagree with the trinkets part.
i switch out my avoidance trink for DMCG and it increased my tps from 4k~6k to 6k~8k, a whole 2k tps boost...
unless im tanking some extremely difficult content or hardmode or w/e, i havent had a problem with my stam/avoidance...
additional tps however lets the dps in my guild go all out, not having to worry about a FD missing or w/e..

Until the level cap is increased the special hit cap will always be 8%, until the level cap is increased the expertise soft cap will always be 26 expertise skill (6.5%), both of these are static and which class/spec/race you are or whether you use a 1h+shield, 2h, or DW makes no difference. (other than a non-Draenei aiming for 7% hit with the mindset that a Draenei will always be present)
These two caps should be more than enough to generate the required threat for anything blizz designs but if you're a few points below then that's perfectly acceptable so long as you can maintain sufficient threat generation.
Stamina and armor are the two most valuable tanking stats on a regular basis, they're both reliable, stamina is effective vs all non-percentage based damage and armor mitigates physical damage which the large majority of damage is physical.
Avoidance is a good stat but it's far from reliable and should generally be a secondary objective to compliment your health and armor rather than take its place.
Spell resistances are extremely situational but in the proper situation are also extremely reliable, generally speaking these shouldn't even be on your list of priorities, for a particular situation where they excel you can swap a few pieces for appropriate resistance gear but generally resistance gear should remain in your bags till needed.

assuming bosses have a 14% parry chance the hard cap is 56 expertise skill
assuming bosses have a 15% parry chance the expertise cap is 60 expertise skill
in reality bosses' parry chance varies from boss to boss and sometimes even patch to patch but they never exceed one of these 2 numbers, 14% being the popularly accepted dodge parry cap
