can't
remove the current gem and reuse it. You can however replace it but the current gem will get destroyed

If that's the case, why would anyone "replace" a gem if you can salvage it by doing 3 extra clicks? (I'm very new to this, thanks!)

Yeah - basically, buy or get cheap but effective gems at Least. if you can - run through Bot in Outlands. I know epic gems drop there often - that's a cheap way to get some gemmage.
then put the absolute best ones you can in the gear you know you will wear a long time. it may take a while to get your t7, so if you have any crafted purples, it's worth it at 80 to drop a fair amount (100ish gold) to gem up. makes heroics and raids a lot better.
