I'm looking for opinions on the best money making professions and what method you use.

Begging.
Followed by questing, including dailies.
Then reading forums (perhaps this question has been asked before?). Then forging your own way with whatever profession you choose.
Then, no matter what you pick, changing market conditions (e.g., new patches) and changing recipes (e.g., new patches) will keep you on your toes. So there's no stable, long-term solution to the problem of making money. For that you just need to be aggressive & creative, regardless what profession you choose. I made tons of money from tailoring ffs, one of the worst profs for moneymaking (in theory).
Move along, nothing to see here.

I have an issue with the Inscription suggestion.
I have Herb/Inscript on my Mage.
I find that I can't seem to make much money off glyphs. They sit in the AGH and are then unsold. I think it's because the demand is so limited.
Say there's a glyph that's selling in the 10g-14g range. I put mine up for 8g hoping for a quick sale. Then, later when I go back to check, there are tons more up there for < 8g, and with hardly any demand, mine doesn't sell.
Herbalism on the other hand has been a great money maker for me.

With Inscription, it's about researching the market, and posting short auction times. Undercuts happen fast, you want to be able to re-post often.
You don't make huge profits on a few sales, but you make decent profits on a LOT of sales.
When I was really making cash, I had 100-150 glyphs posted at 12 hour auction intervals- post before work in the morning, and when I got home at night. As was mentioned above, about 80% didn't sell because they got undercut, but with a 12 hour interval you can just re-post. Thankfully, glyphs don't have much of a deposit cost at all.
Also, remember that vendor-taught glyphs will usually sell for less due to high competition (everyone has them), and glyphs learned from Books of Glyph Mastery sell for the most, due to the least competition. Depending on your sever and your luck, researched glyphs may have a lot or very little competition.

Get auctioneer. Scan the AH when you're on the game and not doing anything. Search the AH after the scan is done for profession related items and see what is in demand. Go with that profession,
If you don't want to do that, take two gathering professions, usually skinning and mining/herbalism because you can't track herbs/ore at the same time. Still, I advise you to scan the AH anyway, so you can see what gathering profession is highest in demand.
On my server, I make money off of LWing, by buying the materials for at least two of
these
( Depending on the price of Frozen Orbs) Make em, and sell em.
So, like everyone else has said, its based on your server, but gathering professions will still be the top money makers.
