I started in Howling Fjord and I was wondering if after the quests dry up here it would be worth it to go to Borean and do those quests before moving on to higher zones?
(might be an obvious thing but i just wanted to check :) )

those 2 zones should be your top priority as they're the only two that will be grey for you at 80.

Awesome, I figured it was a Mr. Obvious question but I just wanted to be sure, thanks all :)

I did Borean Tundra, then Howling Fjord. There's an extra bonus to doing both. Do one, and get all the equipment improvements, then do the other one, and pick the best equipment and sell it. Makes quite a bit of extra income.
Cheers.

Depends how much you like to do instances. When I leveled my main, I skipped Borean Tundra completely. I went from Howling Fjord to Dragonblight to Sholazar Basin to part of Icecrown/Storm Peaks. I never touched Borean Tundra, Grizzly Hills, or Zul'Drak in terms of questing.
I hate questing, I wanted to hit 80 and be done with it. But I also love to run dungeons, and all the xp I got from those is the reason why I didn't need to do all the other zones.
But regardless, I see no reason for you to quest through a level 68-70 zone when you are level 72-73. The quests in Dragonblight will give you more xp anyway.
I would say it depends more on how much you like to do quests. And as previous post said, doing those quests is quite lucrative.
And as for your last remark, doing lvl 68-70 quests as a lvl 72 means you will go faster through the quests so it maybe right that DB quests give more xp, you will need more time to do them.

Or you could DE it, though on my server that would ~ the amount you would get if you sold it.
Dust on my server is going for 4g per currently, and Greater Essence for 13g per.

I suppose it depends on what you want to do. For faster leveling it's probably better to go for the zone that fits your level best (skipping BT or HF, depending).
If you're also going for rep then doing both is probably a good idea.
If you're lvl 80 higher lvl quests give more gold (I understand). So if money is your thing then leveling in lower zones leaves more higher level quests and therefore more gold.
If you're into the Lore then doing both is probably more fun.
There are some quests in Dragonblight which require quests in Borean Tundra be done. I found this out when using Jame's lvling guide to powerlvl my alt couldn't pick up certain quests (she started in HF). It probably also works the other way round. Don't know for sure.
